Omelets over all are good for you if you are dieting!. Just make it with three eggs and veggies and cheese even an extra protein!. When you have toast and hash browns or pancakes with your omelet is when it is bad for you!.It is a great high protein low car breakfast!. Keeps you full and your blood sugar levels stay flat lined on at good level!.Www@FoodAQ@Com

Spring Omelet

1 tablespoon olive oil
2 eggs
1/4 cup milk (optional)
3 spears asparagus, trimmed and cut into 2-inch pieces
1/2 cup sliced fresh mushrooms
1/3 cup green onions, chopped
1/2 cup grated Parmesan cheese

Heat the olive oil in a large skillet over medium-high heat!. Add the asparagus, mushrooms and onions; cook and stir until the asparagus is fairly soft, about 4 minutes!. Whisk together the eggs and milk in a small bowl; pour over the sauteed vegetables and reduce the heat to medium!. While the omelet cooks, lift the edge to allow the uncooked egg to flow underneath!. When most of the egg is cooked, sprinkle Parmesan cheese over the top!. Allow the cheese to melt slightly, then fold in half and serve!.

Use eggbeaters or egg whites in the place of the real eggs!. Use any veggie that you like!. My personal favorite is this:

1 tsp I Can't Believe It's Not Butter
1/2 green pepper, diced
1/2 white onion, diced
5 mushrooms, sliced
Pam Cooking Spray, butter flavor
1/2 C Eggbeaters
1/4 C 2% Sharp Cheddar Cheese

Saute green pepper, onion and mushroom in the I Can't Believe It's Not Butter over medium heat until soft!. In a separate non-stick pan, spray with butter flavored Pam!. Heat over medium heat until pan is hot!. Add Eggbeaters to pan!. Swish it around so that a fine layer of egg sticks to the side of the pan!. Leave the egg mixture alone for a few minutes to allow it to cook and "set up!." When the egg is about 70% cooked solid, it is time for the second swish!. Whatever liquid mixture is left in the skillet, swirl it around the edges again to make the crispy edge layer thicker!. Let the omelet continue to cook until the crispy thin egg edge starts to pull away from the pan!. This is when to add the cooked fillings of green pepper, onions and mushrooms!. Place them on one half of the omelette!. Sprinkle with cheese!. Now, using a spatula, carefully run in under the side that doesn't have the filling and flip over the side that has the fillings!. Let it sit in the pan for approximately 30 seconds to allow the cheese to melt!. Slide out onto your plate:-) Www@FoodAQ@Com

Put whatever ingredients you deem to be healthful in a ziploc bag!. Shake it up so the egg runs all over everything and it's all pretty mixed up!. Put the bag in boiling water for 10-12 minutes!. This method eliminates any cooking oil, grease, butter, etc!. Kids love 'em!Www@FoodAQ@Com
