Has anyone got a recipe for American Muffins?!


Question: Has anyone got a recipe for American Muffins!?
I've been out and bought a muffin baking tray, but in my English cookery books I can't find a recipe for them (admittedly I haven't got many cookery books) I fancy doing either berry ones, or chocolate ones!.
And some tips on ensuring they rise well would be a help!. Www@FoodAQ@Com

CHOCOLATE MARBLE MUFFINS

2 cups self-rising flour
1 cup sugar
half bag of chocolate chips
half bag of white chocolate chips
3 teaspoons melted butter
1 cup milk
1 egg

Preheat oven to 350°F (180C) degrees!.
Sift flour!. Add sugar and chocolate chips (including white)!. Beat egg!. Combine egg, milk and butter!.

Stir until all mixed but if stirred too much it will not rise! Pour into muffin tray!.

Bke for 15-20 mins!. Delicious muffins that the kids will love

All-american blueberry muffins Recipe

1 1/2 cups sugar
3/4 cup shortening
3 cups flour
3/4 teaspoon salt
4 teaspoons baking powder
1/4 teaspoon cinnamon
1/2 teaspoon nutmeg
3 eggs
1 1/2 cups milk
1 teaspoon vanilla
1 quart fresh blueberries

Combine the sugar and shortening until fluffy!. Add eggs and beat again!.
Slowly begin adding the dry ingredients!. Add milk and vanilla!. Mix in
blueberries gently!. Pour into pre-sprayed muffin tins!. Bake at 350
degrees for 20 - 30 minutes until golden!.

You can find recipes online for just about anything!. The one thing to remember about making muffins is not to over mix the batter!. If you think it is about right, you have over mixed it, and you will have pointed muffins!. This is the very basic muffin recipe:

grease pan or use paper muffin tin liners

1/4 cup oil
1 cup milk
3 tsp baking powder
1 egg
pinch of salt

mix lightly, and fold in 1 cup berries
I like to sprinkle the muffins with sugar before baking

bake at 400 for 20 minutes

I just buy the cake mix boxes to make my muffins!. You buy the cupcake paper sleeves and place then in the tray!. You can add extras to your liking!.

BERRY-FRUIT MUFFINS

2 c!. flour, self rising
1/2 c!. sugar
1 egg, beaten
3/4 c!. milk
1 stick butter
1 c!. berries, mashed bananas or chopped apple

Preheat oven to 375 degrees!. Grease 12 medium muffin cups or line with paper baking cups!. Mix dry ingredients; add combined milk, egg, and melted butter, mixing just until moistened!. Fill cups 3/4 full and bake 20-25 minutes or until golden brown!. Makes 1 dozen!.

Granny, these are all great recipes and any I add would be redundant!. However, I tasted a wonderful muffin the other day!. It was a basic apple muffin recipe to which had been added cooked, well drained, crumbled savory sausage, about 1/2 cup!. It was divine with hot coffee for breakfast!Www@FoodAQ@Com

Chocolate Chip Muffins

2 cups all-purpose flour
1/2 cup white sugar
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1/3 cup vegetable oil
1 egg
3/4 cup mini semi-sweet chocolate chips
3 tablespoons white sugar
2 tablespoons brown sugar

Heat oven to 400 degrees F (205 degrees C)!. Grease bottoms only of 12 muffin cups or line with baking cups!.
In a medium bowl, combine flour, 1/2 cup sugar, baking powder, chocolate chips, and salt; mix well!. In a small bowl, combine milk, oil and egg; blend well!. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy!.)
Fill cups 2/3 full!. Sprinkle tops of muffins before baking with a combination of 3 tablespoons sugar and 2 tablespoon brown sugar!.
Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean!. Cool 1 minute before removing from pan!. Serve warm!.

1/2 cup butter
1 1/4 cups white sugar

In a large bowl, cream butter and 1 1/4 cup sugar until light and fluffy!. Add eggs one at a time and mix in!.
Mix flour, baking powder and salt!. Add flour mixture, alternating with milk!. Mash 1/2 cup berries and stir into batter!. Fold in remaining berries!.
Fill muffin cups and sprinkle with the remaining 1/4 cup of sugar!. Bake at 375 degrees F (190 degrees C) for 30 minutes!. Remove from oven and wait 20 minutes to remove from pans!.

Raisin Apple Muffins

1 1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 egg
1/2 cup fat-free milk
1/4 cup canola oil
1 cup chopped, peeled tart apple
1/4 cup raisins
CRUMB TOPPING:
2 tablespoons all-purpose flour
2 tablespoons quick cooking oats
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1 tablespoon cold butter or margarine

In a bowl, combine the flour, sugar, baking powder, cinnamon and salt!. Combine the egg, milk and oil; stir into dry ingredients just until moistened!. Fold in the apple and raisins!. Coat muffin cups with nonstick cooking spray or use paper liners; fill two-thirds full with batter!.
For topping, in a bowl, combine the flour, oats, brown sugar and cinnamon; cut in butter until crumbly!. Sprinkle over batter!. Bake at 375 degrees F for 15-20 minutes or until a toothpick comes out clean!. Cool for 5 minutes before removing from pan to a wire rack!. Serve warm!.

OK all kidding aside here's a couple of good ones!.

Cinnamon Blueberry (or maybe some of those awesome Gooseberrys you have Mmmmmm)
Ingredients:
3/4 stick (6 tablespoons) unsalted butter, melted and cooled
1 cup packed light brown sugar
1/2 cup whole milk
1 large egg
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 1/2 cups blueberries (7 1/2 oz)

Special equipment: a muffin pan with 12 (1/2-cup) muffin cups; 12 foil or paper muffin liners (optional w/ non-stick pans)
Preparation:
Put oven rack in middle position and preheat oven to 400°F!. Put liners in muffin cups!.

Whisk together butter, brown sugar, milk, and egg in a bowl until combined well!. Whisk together flour, baking powder, cinnamon, and salt in a large bowl!. Add milk mixture and stir until just combined!. Fold in blueberries gently!.

Divide batter among muffin cups and bake until golden brown and a wooden pick inserted into center of a muffin comes out clean, 25 to 30 minutes!.


Chocolate Chunk Muffin
Ingredients:
Ingredients3/4 of a stick (6 tablespoons) unsalted butter
4 ounces bittersweet chocolate, coarsely chopped
2 cups all-purpose flour
2/3 cup sugar
1/3 cup unsweetened cocoa powder, sifted
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups buttermilk
1 large egg
2 teaspoon pure vanilla extract
Preparation:
Getting ready:
Center a rack in the oven and preheat the oven to 375 degrees F!. Butter or spray the 12 molds in a regular-size muffin pan or fit the molds with paper muffin cups!. Alternatively, use a silicone muffin pan, which needs neither greasing nor paper cups!. Place the muffin pan on a baking sheet!.

Melt the butter and half the chopped chocolate together in a bowl over a saucepan of simmering water; or do this in a microwave!. Remove from the heat!.

In a large bowl, whisk together the flour, sugar, cocoa, baking powder, baking soda and salt!. In a large glass measuring cup or another bowl, whisk the buttermilk, egg and vanilla extract together until well combined!. Pour the liquid ingredients and the melted butter and chocolate over the dry ingredients and, with the whisk or a rubber spatula, gently but quickly stir to blend!. Don't worry about being thorough—a few lumps are better than overmixing the batter!. Stir in the remaining chopped chocolate!. Divide the batter evenly among the muffin molds!.

Bake for 20 minutes, or until a thin knife inserted into the center of the muffins comes out clean!. Transfer the pan to a rack and cool 5 minutes before carefully removing each muffin from its mold!.
