we do the staples of turkey,mashed potaoes,green beans because my kids never get it during the year so its special to them to have it!.

only trouble is i have to have it ready by 10 am in the morning my hubby leaves by noon to go camp out at best buy to get the black friday bargains !!Www@FoodAQ@Com

Turkey tetrazzini serves 12
INGREDIENTS (Nutrition)
2 (8 ounce) packages cooked egg noodles
1/4 cup butter
2 (6 ounce) cans sliced mushrooms
2 teaspoons salt
1/4 teaspoon pepper
4 cups chopped cooked turkey
2 (10!.75 ounce) cans condensed cream of celery soup
2 cups sour cream
1 cup grated Parmesan cheese

DIRECTIONS
Bring a large pot of lightly salted water to a boil!. Add pasta and cook for 8 to 10 minutes or until al dente; drain!. Preheat oven to 375 degrees F (190 degrees C)!.
Melt butter in a large heavy skillet!. Saute mushrooms for 1 minute!. Season with salt and pepper, and stir in turkey, condensed soup, and sour cream!. Place cooked noodles in a 9x13 inch baking dish!. Pour sauce mixture evenly over the top!. Sprinkle with Parmesan cheese!.
Bake in preheated oven for 20 to 25 minutes, or until sauce is bubbling!.

Turkey enchiladas serves 12
INGREDIENTS (Nutrition)
2 cups shredded Cheddar and Monterey cheese blend
1 onion, chopped
1 (2 ounce) can sliced black olives
24 (6 inch) corn tortillas
1 (19 ounce) can red enchilada sauce
4 cups cooked turkey, chopped

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!. Lightly grease a 9x13 inch baking dish!.
In a small bowl, combine the cheese, onion, and black olives!.
In a small skillet, heat enough oil to lightly coat one tortilla, and cook until soft!. Remove and dip in enchilada sauce to coat!.
Add turkey and cheese mixture to center of tortilla, roll and place in the prepared dish!. Repeat until bottom layer of pan is covered with enchiladas!. Spread enough sauce over bottom layer to cover!.
Repeat process with a second layer; spread remaining sauce on top and sprinkle with remaining cheese mixture!. Bake 20 minutes in the preheated oven, or until cheese is melted!.

Turkey Chow Mein

1 small onion, sliced, separated
2 cups celery, sliced
1 tablespoon vegetable oil (preferably sesame)
1 can water chestnuts, drained and sliced
1 can bamboo shoots, sliced and drained
2 cups Honeysuckle White Boneless Breast, cooked, cut into pieces (or any leftover Honeysuckle White turkey)
2 bouillon cubes, chicken or vegetable (dissolved in 1-1/2 cup boiling water)
2 tablespoon soy sauce
1/4 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons cornstarch
1/4 cup water, cold
8 ounces chow mein noodles
2 cups rice, white, cooked
Cashews to taste
In a large pan, fry onion and celery in oil for 10 minutes!. Add water chestnuts, bamboo shoots, turkey and bouillon to the pan and simmer for 5 minutes!. Add soy sauce, salt and pepper!.
Combine cornstarch with water and stir into mixture!. Cook, stirring until thickened!. Serve over rice, top with chow mien noodles and cashews as desired!.
Makes 6 servings!.

You can use as stuffing in the turkey or make it as a side

Cornbread stuffing with sausage
Ingredients: 1/3cup pecan pieces
1pound bulk pork sausage
1large Jonathan apple
1-1/3cups chicken broth
1/4cup apple juice
6ounces seasoned cornbread stuffing mix


Preparation: 1!.Preheat oven to 300°F!. Place pecan pieces in shallow baking pan!. Bake 6 to 8 minutes or until lightly browned, stirring frequently!.
2!.Place sausage in large skillet; cook over high heat 10 minutes or until meat is no longer pink, stirring to break up meat!. Pour off drippings!.
3!.Meanwhile, coarsely chop apple!. Place in 3-quart saucepan!. Add chicken broth, apple juice and seasoning packet from stuffing mix!. Bring to a boil, uncovered, over high heat!. Remove from heat and stir in stuffing mix!. Cover; let stand 3 to 5 minutes or until stuffing is moist and tender!.
4!.Stir sausage into stuffing!. Spoon into serving bowl and top with nuts!.

I'm a traditionalist!. I stick with the tried and true!. Besides, my family looks forward to having the standards!. It's a big part of the holiday!.
