How funny to see my username on the site like this! LOL Glad you liked the Chicken dish!

I hope you've soaked the beans overnight!. If not, you'll need a pressure cooker to have them ready for supper tonight!

Drain off soaking liquid, add fresh water to beans to cover, plus an inch or so!. Add 1 large chopped onion, a couple chopped celery stalks, a bay leaf, 1 Tbsp!. fresh garlic (1 tsp dry), and if you have it, a ham bone, smoked ham hock, or smoked turkey legs!. Diced ham is ok, too!. Bring to a boil, then reduce heat to low and simmer, stirring occasinally!. Once beans get tender, add a couple Tbsp of creole seasoning, and a few dashes of tabasco if you like it spicy!. (if you add salt too early in cooking, beans may not get tender!.) Allow excess liquid to evap w/ lid off, then adjust seasonings (S&P mainly)!. Fish out bay leaf and serve over white rice!. All in all, this takes about 2 hours on the stove, about 6 in the crockpot, about 45 min in a pressure cooker!.Www@FoodAQ@Com

Cook your Beans in the crockpot with 1/2 head garlic, cayenne, and beef base!.

for the rice, (2 cups) brown it in the bottom of a large pan, be careful not to burn, when golden add 3 tbsp Creole Seasoning and 1/2 stick butter!. When you start to smell the seasoning from the heat (about 1 minute) add enough water that it is 1 inch above the surface of the rice!. bring to a boil and simmer for 25 mintues!. If using brown rice it will take longer!. abour 50 minutes!. top the rice with the beans when ready to serve!. You can also add ground beef if you want some meat with it!.
