Question: What could I make for an evening meal with these ingredients!?
Mini chicken breast fillets (ready-to-eat variety)
Carrot
Leek
Eggs
Cauliflower
Semi-skimmed milk
Swede
Onion
Cottage cheese
Broccoli
Seasoning (Salt, pepper etc)
Olive oil
Chicken stock
Chopped mushrooms
Basmati rice

Hi there,
Personally I would either do a Risotto or a stir fry!. A risotto would be better, I know it would be with basmati rice, but I've used this and it works fine!.
Risotto method:
1/ Chop up all your vegetables and fry(using oil) in a pan, so the juices develop!. (Mushrooms, Broccoli, Onion, Cauliflower, leek, Carrot, swede and bung in the old kidney beans)!. This will take about 10-15 minutes to soften, depending if you like your veg crunchy!.
2/ Now you will have to put the rice on, once again if it takes longer than 15 minutes, you will have to do this before doing the veg!.
TIP: Put the stock and water in the rice, as it will absorb, and tastes so much better!.
3/ Now prepare your chicken if you wish, like chop into small peices or disect lol!.
4/ Once cooked, put everything together the rice, veg, chicken and then add the cheese/ cheeses and season!.
5/ Let the cheese melt than serve voila warm dish for a cold evening!.
Ps: I would forget the eggs and milk !.

MullaKinVowles Soup

Ingredients:

2 cups chicken broth
2 cups milk
3 1/2 tablespoons all-purpose flour
1/2 cup skinless, boneless chicken breast halves - chopped
1 teaspoon curry powder
2 cups cooked white rice (could use the basmati rice instead)
1 stalk celery, finely chopped
1 small onion, finely chopped
1/2 cup cooked chopped broccoli (optional)
1/2 cup cooked cauliflower (optional)
1/2 cup cooked, sliced mushrooms
3/4 cup shredded Cheddar cheese

Directions:
In a large saucepan, heat chicken broth!.
Place milk in a jar with lid, and add flour; shake until well blended!. Add milk/flour mixture to chicken broth; stir until boiling!. Stir in curry powder, and reduce heat to medium low!.
Place chopped chicken breast, onion, and celery into skillet!. Cook at medium heat until chicken is cooked and vegetables are soft; add to soup!. Stir rice and optional vegetables into the soup!. Simmer for 30 minutes, stirring!.
Stir in grated cheese before serving!.

Gently sweat/sautee diced onion in a little oil, clean and dice leek, add to sautee pan and continue to cook over LOW heat, add in slices of carrots, and the chopped mushrooms!. Add those ingredients to chicken stock and some salt, pepper, & garlic if you have some!. Bring to a boil then reduce to low and simmer!.

Prepare the chicken breasts -- if they are not breaded, you can sautee in olive oil and dice & throw into your soup!.
Or you can sautee and have them as a dish with your soup!.

Sautee mushrooms and onions with oil, salt, pepper, and a dash of sugar!.
Make rice!.
Grill or sautee chicken breasts and serve mushrooms/onions over the chicken with rice on side!.
With side of steamed broccoli!.

Make rice and add lots & lots of cheese, a bit of milk, and steamed broccoli to it!.
Put grilled or sauteed chicken breast on top and bake in a baking dish for 35 mins on 375, covered!.

use the chicken, (fully cook chicken first) carrots, possibly eggs, onion, broccoli, salt, olive oil, maybe some mushrooms to cook stir fry style in a frying pan, also cook rice seperately, when all food is done put you rice on a plate then throw your strir fry on top of rice and then sprinkle some shredded cheddar cheese on the top for extra yummWww@FoodAQ@Com
