When I roast a chicken, I wash it inside and out under the cold tap, then put it in the roast tin with a small amount of water in the bottom(about 3 tablespoons) I pour a little extra virgin olive oil over the chicken and sprinkle a stock cube over it (this make the skin lovely and crispy) I then cover the roast tin with fiol and cook in the oven on gas mark 6 for 1 hour 30 mins (ckeck that the meat jucies are running clear by sticking a fork or knife in the inside of the leg, if it is still bloody then cook uncovered for a further 20 mins) I then un cover and cook for a further 15 mins on gas mark 7 to crisp the skin!.!.!.!.good LuckWww@FoodAQ@Com

see smm's answer!.!.!.!.do the beer can chicken!. Except, use a more exotic spice rub than just salt and pepper: Use whatever you like, but I usually include paprika, cumin, garlic powder, brown sugar!. Put the rub all over the inside and outside of bird, and dump a teaspoon or so of the spice rub into the half-full beer can before putting the bird onto it!. also, it is prefereable to do this on the grill over indirect heat, if you have the resources to do so!. If not, though, it can be done in the oven!. Just make sure that it is standing upright inside a pan, because it will drip quite alot of fat!.Www@FoodAQ@Com

two easy recipies

1!. rosemary, butter, lemon!.

cut the lemon in half!. put a little bit of butter on each half, and some fresh rosemary (kinda stick it in the lemon)!. put the halves in the chicken cavity!. (save one or two halves) add some fresh rosemary sprig to the cavity!. use the other lemon to squeeze the juice out on the outside of the chicken!. add a little bit of butter and more rosemary to the outside!. bake on 350 for 25 minutes per pound!.

2!. beer chicken!. get one can of beer (i've yet to have tasted a difference by beer but you might so use your favorite i guess)
pour out about half the beer from the can (or drink it)!. season the inside and outside of the chicken with salt and pepper!. put the can in the middle of the pan (right side up) and put the chicken on top of it (so the beer can fits into the cavity) bake at 350 for 20-25 minutes per pound!. you can also use a few halves of limes sprinkle some lime juice on the outside and put the lime halves in the cavity with the beerWww@FoodAQ@Com

Rinse it out, and take out the Giblets!. Season it however you want to season it!. Put it in a roasting pan and bake 350 degrees for 20 minutes PER POUND!.

Chicken is ready when juices run clear and you can wiggle a leg easily!. OR better yet to use and thermometer and make sure the meat in the thigh is 180 degrees farenheit or the breast should be at about 170 degrees farenheit!. When taking the temperature try to avoid getting the thermometer aginst the bone which will skew the reading!.Www@FoodAQ@Com
