What is a decent substitute for Cornichons? Sweet Gherkins?!
I want to prepare Anthony Bourdain's recipe for Steak Tartare, which calls for a certain amount of "cornichon!." After some researching, I have found out that cornichons are what we in the States call "gherkins!." However, when I looked for them at my local grocery, I found only "sweet gherkins," and I just don't think that these would taste good in steak tartare!. Personally, I think dill pickles would be more to my taste, but I just don't know!.!.!.perhaps I should use fresh cucumber!?!? I need a chef!Www@FoodAQ@Com

Don't use Sweet Gherkins!. Try to find a kosher deli and I'm sure you'll find them there -- either cornichons or regular gherkins!. You also might try to find an international foodstore or order online!. Something as simple, plain, yet elegant as Steak Tartare (which is MARVELOUS!) needs the proper ingredients!. I don't believe Dills will give you a satisfactory result, they're not tart enough!.
