You could make a pumkin and lemon risotto!. I just made this, it was AMAZING!
Creamy Pumpkin and Lemon Risotto
* 1 oz butter
* 1 onion, finely shopped
* 3 cloves of garlic, finely chopped
* 1 kg pumpkin, chopped
* 250g risotto rice
* 2 tbsp dried sage
* 1/2 bottle of white wine
* 1 pint stock
* 50ml cream
* juice of 1/2 lemon
* A handful of rocket, torn in half
1!. Fry the onion and garlic gently in the butter for around 15 minutes or until beginning to brown!.
2!. Add the chopped pumpkin, cover and leave the cook for around 10 or 15 minutes, until beginning to soften!.
3!. Stir in the risotto rice until all coated from butter/pumpkin mix then pour in the wine!. Add the sage and stir round!.
4!. As the wine starts to soak into the rice add the stock a little at a time and stir in to stop the rice sicking!.
5!. When the rice is cooked (will be approx 30 minutes), stir in the cream, rocket and lemon juice!.
6!. Leave to cook for 2 more minutes before serving!. also nice served sprinkled with parmesan!.

If you are asking about the stringy stuff connected to the seeds - nothing, just throw it away!. You can roast the seeds but it is a pain!. First you have to thoroughly wash them to get all of the sticky junk from the pumpkin off, which is quite a chore!. After all this is done, you usually don't end up with many seeds!. You can cook the pumpkin flesh you scrape out of the inside of the pumpkin before carving it, but you usually don't have much pumpkin, not enough to make a pie with!.Www@FoodAQ@Com
When I was a child my Great Aunt used to put the pumpkin seeds in the oven to dry or roast!. Once done (usually 15-20mins) she would place them into a paper bag, put a little butter, sugar, and Cinnamon in with them and then shook them up! I think she put them back into the oven for 5-10 more mins!. They're actually really good! Try it you might like too!. Www@FoodAQ@Com
Pumpkin pie is always an option!. My favorite is making roasted pumpkin seeds!. You just have to separate the seeds from the "goop" and bake them on a sheet tray!. Then toss them with some salt and enjoy!.Www@FoodAQ@Com
