Question: What to do with a panna cotta that didn't set!?
don't want to throw it away!. I might have added more water than needed !.!.it was in the ref overnight but still not set!.!.Www@FoodAQ@Com

It sounds like you need more gelatin!. I would use 1/4 oz or 1 Tbs of gelatin for every 2 cups of liquid!. Just rewarm your liquid and start over, adding more gelatin as needed!. also, you may have added the gelatin when you liquid was too warm!. This destroys the proteins and stops the panna cotta from setting!. In this case, you can use the same mixture, just reheat slightly and add new gelatin!.Www@FoodAQ@Com

Put it in the freezer and pass it off as a semifreddo!. Www@FoodAQ@Com
