Boiled Eggs- Easy Peel?!

Question: Boiled Eggs- Easy Peel!?
How is it that 1 of 2 eggs prepared in the same boiling pot, cooled in the same manner, can peel so drastically different!. One peel came off easily with a perfectly restored body!. The second one; was a disaster!.!.!. big chunks of egg coming off with shell!. I know there is a thin skin that is between the shell and the "body" of the egg!. How do you prepare a boiled egg so that you are guaranteed an easy, clean peel !?!? I must prepare deviled eggs for a party!.
Many thanks!Www@FoodAQ@Com

Answers:
it all depends on the freshness of the eggs , add 1 tbls of white vinegar to the cooking water when the eggs are cooked rinse them in cold water and shake them in the pan to break the shell roll in between your hand and the shell will come loose rinse the eggs in case some pieces of shell are still on the eggs!.

to answer your second question

older eggs peel easier , I knew that a long time ago but I need to prove that I'm not wrong on this so I went on line and found this for you to read !.

I hope someone has the key!. Last weekend I had to make deviled eggs and the same darn thing happened to me!. I did find a trick to peeling them, crack the shell by tapping lightly on the counter, then gently roll the egg and peel under running cold water!. It helped a little in that situation!. I boil eggs by starting with cold water, place eggs in pot and turn water on to boil - medium high heat!. Let boil 1 minute then turn the burner off and let sit in hot water for 12 minutes!. Works every time!. But this last batch of eggs, not so much!. I think it is the eggs!. Www@FoodAQ@Com

Another way to get a boiled egg out almost whole is to tap one end (narrow end) on the counter and peel off about a dime sized portion of the shell!. then tap the fatter end and remove about a nickel sized portion of the shell!. holding the egg near a bowl, blow into the narrow end hole (sort of like blowing up a balloon) and the egg will pop outWww@FoodAQ@Com

When you remove your eggs from the boiling water, put them in a bowl of ice water (with ice in it)!. This should make the shells easier to peel!. also, before you peel them, roll them on the counter under the palm of your hand!. This will crack the shell all over and make it easier to peel!. Then, while peeling, hold the eggs under a stream of cold water!. The shell should fall right off!.

There is some device out there called an "Eggstrator" that is suppose to peel eggs very easily!. It uses air somehow and force the egg through a tight hole!. You can get them at drugstores that sell As Seen On TV products!.

I usually peel the eggs right away under very cold water the shells shrink and crack!. I find a you can get under the shell with a tablespoon!.Www@FoodAQ@Com

The best thing I know to do is first of all you need to use older eggs!.
They will peel better than fresh eggs!. Did you salt the water!? Salt the water and start with cold water!. Do not cook them fast! Immediately rinse in cold water when cooked!. If the egg cracks while cooking you can pour some vinegar on the egg and it seals it up!.Www@FoodAQ@Com

Eggs:- Shelling!.
Drain and run under cold water!.
Crack well, and peel from the air sac end!.
Older eggs peel easier than fresh eggs
If you are just going to make sandwiches etc!. , cut them in half and scoop out with a spoon!.
