2 chicken breasts seasoned with salt/pepper and italian herb seasoning if you have it!.

1 portabello mushroom, sliced
3 garlic cloves crushed
1 can lite beer or 12 oz white wine

Saute the chicken breasts in butter in a skillet until golden and cooked through, set on plate to rest!. Saute garlic until golden and add mushrooms slices, cook until all moisture is released!. add salt if needed, deglaze pan with beer or wine (2 totally different flavors but both work in this recipe, I really like the beer with it) and let the liquid simmer until it has reduced by 3/4 and has thickened!. add sliced green peppers and cook until bright green!. Place pasta on plate then chicken breast, then top with green pepper mushroom mix!.!.!.!.you can add onion wedges to they are tasty as well, about 1/4 to 1/2 onion depending on how well you like onion!.Www@FoodAQ@Com

Do you have any canned tomatoes and paste or sauce!? You could make a tasty spaghetti sauce with those ingredients and a bit of cheese if you have it!. If you have any red wine or red cooking wine it's nice to cook the chicken by covering it decently with wine and simmering for a bit to keep it from toughening up!. This being done after saute-ing the garlic and peppers in olive oil in the pan first, of course!. Throw in the mushroom (sliced) at the same time as the chopped tomatoes and paste!. Let it all simmer together until it's smoother and seems cohesive!. also if you have any basil, oregano, and/or dried bay leaves in your spice cabinet you can put those in with the tomatoes as well!. Last of all toss a little bit of olive oil on top of sauce right before serving, and stir in!. Bon Apetit!Www@FoodAQ@Com

Cut the chicken breasts and make a pocket for a filling of:
chopped half a mushroom
a green pepper and garlic
Fry them all in a hot pan, add salt and pepper
Fill the chicken breasts, use toothsticks to seal!.
Salt and pepper the chicken breasts and put a bit of normal flour over them - makes them crispy after frying!.

With the rest of the mushroom and pepper make a sauce by frying them, add red wine/white wine and cream!. If unavailable add milk and just let it simmer slowly!. You can use some flour (please mix in cold water first before adding to the sauce) to thicken or any available finished packet sauce!.

Serve with rice!.

It would be wonderful though if you would have a vegie to serve it with, or just a simple salad!. Good luck!.

I would cook the chicken separate from the veggies!. Cut up the garlic, add about two tsp!. of it onto the chicken breasts in a roasting pan!. Drizzle with olive oil (a couple spoonfuls), add some oregano or rosemary if you have them!. You can also use Mrs!. Dash in addition to or instead of those spices if you don't have them!.
Heat at 350 for about 45 minutes!.

Cut up the peppers and mushroom - sprinkle on some olive oil and salt and pepper!. Put them on a small baking pan!. Wait until the chicken has about 10 minutes to go, and add the pan of veggies!. You can saute them on the stove, but roasted veggies are the best if you have room!. I just did this with brocolli - hmmmm, my new fave way to cook veggies! That is sweet - you cooking for your girl! :)Www@FoodAQ@Com
