I actually just made this few days ago!.!.

2 pounds lean ground beef
1 (46 fluid ounce) can tomato juice
1 (29 ounce) can tomato sauce
1 (15 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can pinto beans, drained and rinsed
1 1/2 cups chopped onion
1/4 cup chopped green bell pepper
1/8 teaspoon ground cayenne pepper
1/2 teaspoon white sugar
1/2 teaspoon dried oregano
1/2 teaspoon ground black pepper
1 teaspoon salt
1 1/2 teaspoons ground cumin
1/4 cup chili powder

Place ground beef in a large, deep skillet!. Cook over medium-high heat until evenly brown!. Drain, and crumble!.
In a large pot over high heat combine the ground beef, tomato juice, tomato sauce, kidney beans, pinto beans, onions, bell pepper, cayenne pepper, sugar, oregano, ground black pepper, salt, cumin and chili powder!. Bring to a boil, then reduce heat to low!. Simmer for 1 1/2 hours!. (Note: If using a slow cooker, set on low, add ingredients, and cook for 8 to 10 hours!.)

Peter's Red Hot Chili
3 tablespoons oil
2 pounds stew beef
5 cups water
1 green pepper, diced
1/2 cup chopped onion
1 tomato, diced
1 1/2 tablespoons salt
2 teaspoons cayenne pepper
1 tablespoon granulated garlic
1/4 cup chili powder
2 tablespoons cumin
1 1/2 cups water
1/3 cup cornmeal
1 6 oz can tomato paste
Monterey Jack cheese, grated









Brown beef in oil!. Add next 9 ingredients and simmer for 2 hours!. In a small bowl mix the water, cornmeal, and tomato paste!.
Stir cornmeal mixture into chili to thicken!. Simmer another 20 minutes!.
Garnish with sliced raw onions and grated Monterey Jack cheese!.

Ingredients
2 tbsp olive oil
2 onions, chopped
2 garlic cloves, crushed
1kg/2?lb lean minced beef
2 glasses red wine
2x400g cans chopped tomatoes
3 tbsp tomato purée
2 red chillies, thinly sliced, or 3-4 tsp dried chilli flakes
1 tsp ground cumin
1 tsp ground coriander
1 stick cinnamon
good shake of Worcestershire sauce
1 beef stock cube
salt and freshly ground black pepper
2x400g can red kidney beans, drained
1 large bunch coriander leaves, roughly chopped
wedges of lime, to serve

Method
1!. Heat the oil in a large, heavy-based saucepan and fry the onion and garlic until softened!. Increase the heat and add the mince, cooking quickly until browned and breaking down any chunks of meat with a wooden spoon!. Pour in the red wine and boil for 2-3 minutes!. While waiting, pour a glass for yourself!.
2!. Stir in the tinned tomatoes, tomato purée, fresh chilli or chilli flakes, cumin, ground coriander, cinnamon, and Worcestershire sauce and crumble in the stock cube!. Season well with salt and pepper!. Bring to a simmer, cover with a lid and cook over a gentle heat for about 50 minutes to 1 hour, stirring occasionally until the mixture is rich and thickened!. Add the kidney beans and fresh coriander!. Cook for a further 10 minutes, uncovered, before removing from the heat, adding any extra seasoning if necessary!. This is ideal served with the lime wedges and also rice, crusty bread or jacket potatoes, guacamole, sour cream and a big green salad!.
Tips:
The chilli is much tastier a day or two after it's cooked as the flavours develop and the texture becomes richer!. Simply leave to cool, stick in the fridge and gently heat before serving!. If you're eating the chilli on the day you prepared it, any leftovers can be frozen in individual portions in well-sealed sandwich bags, then reheated by boiling from frozen in a saucepan of water for about 15-20 minutes until steaming hot!.Www@FoodAQ@Com

HOMEMADE CHILI SAUCE

1 peck tomatoes
9 green peppers
6 med!. size onions
3 c!. sugar
3/4 c!. salt
1 doz!. med!. red peppers
1 qt!. vinegar
3 tsp!. cloves, ground
3 tsp!. cinnamon
2 tsp!. nutmeg
2 tsp!. ginger

Chop all ingredients in pieces and mix well!. Bring to a boil and continue to keep at a low boil for 3 to 4 hours until thickened and cooked thoroughly, can or freeze or can in jars like jelly!.

Its a simple home made chilly chutney which can be had with yr food or even used as a layering on sandwiches!.Take some red chillies even green would do Not peppers the indian green chilly/red!. Soak them in some vinegar for some time then grind this with some garlic flakes the more garlic the better!. add salt and put in a jar and place it in the fridge!. the vinegar has to be added do not throw that vinegar!.Www@FoodAQ@Com

I hate to say this!.!.!.but I have tried them all!.!.even from scratch!. And I STILL prefer buying that little packet of Schillings Chili seasoning, following directions exactly, then adding a can of whole tomatoes (which I break up in the pot) to anything else I've ever tasted!!

Serve with fresh shredded cheddar and a dollop of sour cream, and homemade cornbread on the side!.
