Question: A good Christmas cake recipe!?
I normally make Delia Smiths but am looking for an alternative this year!. A tried and trusted one please!.Www@FoodAQ@Com

12oz self-raising flour
1 teaspoon mixed spice
4oz ground almonds
8oz butter
8oz caster sugar
4 eggs beaten with 8 tablespoons milk (or half milk and half brandy)
8oz currants
8oz sultanas
8oz raisins
4oz halved glace cherries
4oz cut mix peel
sieve together flour spice and ground almonds
cream butter and sugar, stir in flour mixture and eggs with milk(alternately,a little at a time)
add fruit, mix thoroughly
place mixture in a greased and line 9 inch round or 8 inch square tin
protect with brown paper fastening a band round the tin 2-3 inches higher than the tin
bake in slow oven (300f gas 2) about 41/2 hours

Christmas Cake

Makes One 2-layer cake

From the kitchen of Barbara Fetter

1 small package red Jello (Cherry, Strawberry etc)
1 small package green Jello (Lime)
1 package white cake mix (enough for 2 layer cake)
1 16oz container Cool Whip

Make white cake mix per box instructions, using two 9 inch round cake pans!. After baking, let cakes cool for 10 minutes - then pop out of pans, clean out cake pans and return cakes back to pans!. Using a fork, poke holes into cakes at various points to receive jello!. Make up the red jello with hot water only and pour evenly as possible over one of the cakes!. Then make up the green jello with just hot water and pour over the other round cake!. Put both cakes into the frig for several hours!. Place the bottom of the cake pans in hot water to help in removing the cakes from their pans!. Spread the top of one cake with Cool Whip!. Place the other cake on top and spread the remaining Cool Whip on top and sides!. Cover and refrigerate until ready to serve!.

Red Velvet Cake

2 1/2 cups flour
1 1/2 cups sugar
1 tsp baking soda
1 tsp cocoa powder
1 cup buttermilk
1 cup oil
1 tsp vinegar
2 eggs
1 1-oz!. bottle red food coloring
1 tsp vanilla
Icing:
1 stick (1/2 cup) butter
1 1-lb!. box powdered sugar
2 8-oz!. packages cream cheese
1/2 tsp vanilla
1 cup chopped pecans

Sift together dry ingredients!. Add other ingredients in order: buttermilk, oil, vinegar, eggs, food coloring, and vanilla!. Mix thoroughly!. Bake in Bundt cake pan which has been greased and floured about 50 minutes (or until toothpick comes out clean) at 350 degrees!. Cream Cheese Frosting: Let butter and cream cheese soften at room temperature!. Cream well!. Add sugar and beat until creamy!. Add vanilla and blend well!. Frost cake after it has cooled and sprinkle 1 cups chopped pecans on cake after it has been frosted!.
