How come my pumpkin pie filling comes out mushy? I want it to be firm.?!
yes, i used two eggs pe the directions, with 2/3 evaporated milk, 29 oz pumpkin puree from libby's, all into a Marie Calendar's frozen pie shell!.!.!.!.(didn't overfill, center rack, all ingredients mixed well)
directions were 425 for 15 min, and then 350 for additional 50-60 min

I see where some of the confusion is!.!.!.you used Libby's Pumpkin Pie filling, rather than pure pumpkin!. That comes in a 29-30 oz can!. I looked at the recipe, and you followed the directions to a T!. It maybe that that is the way the pie is supposed to come out, and you just don't like it!.
Can I suggest you try again!? Next time, use the can of Libby's 100% Pure pumpkin, and add the spices yourself!. It's almost as easy as making the version you did, but I think you'll have a firmer pie!. Don't give up!.!.every cook learns through trial and error!.
***Libby's Famous Pumpkin Pie***
3/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
1 can (15 oz!.) LIBBY'S? 100% Pure Pumpkin
1 can (12 fl!. oz!.) NESTLé? CARNATION? Evaporated Milk
1 unbaked 9-inch (4-cup volume) deep-dish pie shell
Whipped cream (optional)
Directions:
MIX sugar, cinnamon, salt, ginger and cloves in small bowl!. Beat eggs in large bowl!. Stir in pumpkin and sugar-spice mixture!. Gradually stir in evaporated milk!.
POUR into pie shell!.
BAKE in preheated 425° F oven for 15 minutes!. Reduce temperature to 350° F; bake for 40 to 50 minutes or until knife inserted near center comes out clean!. Cool on wire rack for 2 hours!. Serve immediately or refrigerate!. Top with whipped cream before serving!.Www@FoodAQ@Com

heat to the filling use a water bath just as you would with a custard!.
Make sure the ingredients are all at room temperature before mixing and placing in the oven!. also, since there is no charge for it, have your Utility Co, check the calibration of your oven!. It may be off as to the settings!. This can be cured by accounting for the difference you have been advise of, or in the alternative purchase a new stove,

Libby's is a standard Pumpkin pie recipe!. Some thing is wrong with your recipe!. For one 9" pie you use one standard can of pumpkin (15oz)!. Revisit your recipe, and compare with Libby's recipe by clicking on the following

Check your recipe again!. This almost sounds like the amount of filling for two pie shells which would explain it not setting!.Www@FoodAQ@Com
