Answers:
Cut the mold off and use it!. It gets better as it ages!. When you're storing it, wrap it VERY TIGHTLY in plastic wrap -- thoroughly!. Then, put it in a zip-top baggie, mostly close the top, squeeze all the air out, and close the top to seal!. It'll help you triple the life of your cheddar in your fridge!. Heck, I'm still using a block that's 3 months old! And no mold!.

Just cut the moldy spots off!. It sounds like you're storing it just fine; sometimes it lasts a long time, sometimes not!. That might depend on how long it's been at the store, before you bought it:) !.!.!.!.!.!.!.Remember, that the blue in blue cheese is actually mold:)Www@FoodAQ@Com

Yes you can just cut the mould off!.

I always leave mine in the shrink wrap it comes in and peel back enough and just cut off what I need, and then re-wrap the cut end and keep in an airtight container!.Www@FoodAQ@Com

Cut off the mouldy parts and use it!.

If you grate cheese and put it in a bag (or box) you can freeze it and it should last you a bit longerWww@FoodAQ@Com
