Bran Muffins
1 c flour
1 tsp baking powder
1 ? c baking bran
? c sugar
1 T butter
1 T golden syrup
1 tsp baking soda
1 c milk
1 egg
Sift flour and baking powder, mix in bran and sugar!. Melt butter and golden syrup together, dissolve soda in milk, add these with the egg to the dry ingredients and mix quickly, just enough to combine!. Spoon into greased muffin tins and bake 12-15 minutes @ 220degC!. Can add sultanas, walnuts or a mashed banana!.
Honey Crunch
125g butter
4 T sugar
4 tsp honey
Melt and bring to boil, simmer for 4 minutes!. Add 4 cups rice bubbles!. Stir and pour into greased dish, press down!. Cut before cold!.

1 tsp cinnamon
? tsp mixed spice
1 tsp baking soda
1 egg
1 T golden syrup
Mix butter, sugar and golden syrup on low heat until combined, remove from heat, add egg!. Add sifted dry ingredients and mix until well combined!. Form into a ball and wrap with gladwrap!. Refrigerate for 3 hours!. Using half the dough at a time, roll out to 6mm thick and cut into shapes!. Bake 8-10 minutes @ 190degC!. Cool on wire racks!.

200g soft butter

1 tsp vanilla essence

3 c flour

1 c strong boiling coffee
Put everything into a large bowl in the order given and beat for 1 minute or until smooth!. Stir in 100g chocolate chips or dots and pour into a lined 23x33cm tin!. Bake @ 160degC for 1 hour!.
2 tins - bake for 35 minutes
12 muffin tins (half recipe) - bake for 25 minutes
Cream Cheese Icing:
50g cream cheese
50g softened butter
200g icing sugar
? c cocoa
Beat all together!.

Red Wine Casserole
5-6 chicken thighs
or 9-10 lamb chops
or 500g casserole steak
1 T oil
4 rashers of bacon or ham, cut into large pieces
5 pickling onions, quartered
1 c red wine
1 c water
1 tsp stock powder
1 T tomato paste
several halved mushrooms
1-2 T cornflour and water
Heat oil in cast iron casserole dish, add meat, brown well and remove!. Add bacon, onion and garlic, cook until bacon is browned!. Stir in paste, wine, water and stock!. Bring to boil, add meat and mushrooms!. Simmer uncovered for 30 minutes, then uncovered for 10 minutes, until meat is tender!. Remove meat and thicken gravy with cornflour and water!. Return meat to casserole, stir and serve!.
Smoked Chicken in Creamy Mustard Sauce
350g smoked chicken, diced
150g mushrooms, sliced
? c white wine
250-300g sour cream
? an onion, diced
2 T butter
1 tsp seeded mustard
Microwave onion in 1 T butter for 3 minutes!. Melt the other T butter in a saucepan, add onion and mushrooms, sauté briefly!. Add wine, simmer 2-3 minutes!. Add sour cream and mustard!. Reheat, add chicken!. Serve on Fettuccine!.
Grandma's Pork Chops
3 pork chops
3 T flour
3 tsp powdered onion stock
2 T butter
1 medium onion, diced
Place flour and stock in plastic bag, add chops and shake to coat!. Brown cops in butter, remove, add onion and cook until glassy!. Add remaining flour and stock to pan, stir!. Add enough water to just cover chops, stir, and add chops!. Simmer for ? - 1 hour until tender!.
Pork and Asparagus
300-400g pork, cut into small pieces
12 spears asparagus (or equivalent of broccoli), cut into rings
1 T oil
Marinade:
2 T soy sauce
1 T red wine
1 tsp sugar
2 tsp cornflour
Marinate pork for at least 10 minutes!. Heat oil and stir fry pork for a few minutes until nearly cooked!. Add asparagus and stir fry further 2 minutes!. Serve on a bed of noodles!.

450g mince (ground beef)
1 ? c water
? c peas
? c corn
1 small carrot, diced
? large onion, diced
3-4 tsp beef stock powder
Place in a saucepan, bring to boil, simmer 10 minutes!. Thicken with 2-3 heaped tsp cornflour mixed with a little water!.
Can add 1-2 T curry powder

2-3 slices of bacon, diced

Press bread butter side down into patty tins!. Beat egg, add bacon, onion, cheese and spaghetti!. Spoon into bread!. Bake @ 190degC for 15-20 minutes!.

Heat 1 quart oil to 365 degrees F (185 degrees C) in a large, heavy saucepan or deep fryer!.
Coat the pork with 1/2 cup cornstarch, and fry in the heated oil about 10 minutes, until evenly browned!. Drain on paper towels!.
Heat 1 tablespoon oil in a wok over medium heat!. Stir in the celery, green bell pepper, and onion, and cook until tender!. Season with salt and sugar!. Remove from heat, and set aside!.
In a large saucepan, mix 1 cup water, 1/4 teaspoon salt, 3/4 cup sugar, apple cider vinegar, ketchup, and 1/2 teaspoon soy sauce!. Bring to a boil, and stir in the cooked pork, celery mixture, and the pineapple chunks with juice!. Return to boil, and mix in 2 tablespoons cornstarch and 1/4 cup water to thicken!. 1 Can Diced tomatoes 28, ounce
1 Medium Onion, thinly sliced, or chopped
Black pepper to taste
In a large casserole mix together sauerkraut, tomatoes, onion and pepper!. Add pricked sausages, buried beneath the sauerkraut!. Cover and place in 350 degree oven for one hour, turning sausages once or twice during cooking time!.
