Question: Hep with this recipe !?
ok i was makin this pretty good recipe from a book
asks for boneless chicken
parmeshan cheese breadcrumbs
dijon mustard and butter ina bowl for a glue for the cheese and breadcrumbs

ok heres what im havin trouble with the very first time i made this it said to put it in the oven i did but the breading became really soggy i had used crackers crushed up cause i didnt have any bread crumbs but it tasted like i thought it should have and my folks liked it i just made it tonight decided to fry it first so the breading dosnt fall off or become soggy like it did before i did use breadcrumbs this time and i fryed each side for 4 minutes in canola oil then baked it for 18 minutes after that the breading stayed on for the most part except gettin stuck on the bottom of the frying pan but this time it was incredibly greasy and didnt taste like it had previously which i liked the taste before so i was wondering if any experienced cooks could help me find a way to make this recipe work out im pretty new to cooking and this recipe was ina begginers book so i dont kno why im having so much problems with it but i like this dish i dont kno why lol srry its so long thanks for all ur help Www@FoodAQ@Com

I have made a recipe like this!. If you dip the chicken in beaten egg the breadcrumbs mixed with the Parmesan cheese will stick to it better!. You will want to make sure you coat your fry pan with something like Pam so it doesn't stick, don't use oil as it will be too greasy and messy and the breadcrumbs will just fall off or get to soggy!. Make sure when you put this in the oven the oven is already hot, so it doesn't go soggy heating up!.

When you serve the chicken sprinkle it with some more parmesan and garnish with lemon slices and fresh parsley!.

You should try egg and milk as the 'glue'!. Dip the chicken in the milk, the the egg, and then your crackers!. If you want it to be really good, mix some garlic in with your cracker crumbs!. That should help a bit!. It's hard to say, because I have no idea what the recipe is!. But, the crackers should work fine!.

You can also try and substitute your cracker crumbs for flour!.Www@FoodAQ@Com

I would probably try margarine instead of butter, it would keep it greased so that it doesn't stick to the pan, but still gives it the same affect as the butter w/ the dijon mustard!. IDK that's what I WOULD try, Or I'd just try the good old egg for the ''glue' for the cheese and breadcrumbs to stick!.

The oil in your skillet was probably too low when you put the chicken in!. and by the time it came up to temperature the chicken had soaked up the oil!. The oil needs to be hot enough so that when you put the chicken in it the chicken begins to cook right away!. Www@FoodAQ@Com

I have used a similar recipe accept it calls for Mayo instead of the dijon mustard!.!.!. When I cooked it, the breading didn't become soggy, it was really good!. I found it on the "Best Foods" Mayonnaise label!.Www@FoodAQ@Com

did you pre heat the oven or try cooking longer or at higher heat or use dry mustard instead when baking your always going to have spme problems like the ones your having frying dose help but will turn greesy maby try cooking all the way with frying but use deep pan with lots of greese then chicken will float instead of sticking when done lay chicken on paper towle to drain grease!. heat greas to 350 375Www@FoodAQ@Com

I usually mix cheese and bread crumbs together first then dip chicken in egg & milk mixture then into cheese & bread crumbs this way it is lightly coated with the batter then fry in oil olive until lightly browned on both sides!. Here"s one for you that has never failed me!.
Chicken breasts,one egg beaten, and 2 or 3 cups of crushed corn flakes, ( that's enough crumbs for 3 or 4 breasts)

Dip chicken into the egg (will make crumbs stick)
place crumbs in a cake pan and lay chicken in crumbs, push down,and turn over and do the same,
lay on a greased pan or non-stick pan, salt and pepper well
Bake for 40 mins!. at 350 degrees,turn after 1/2 hour

Put the cheese in with the breadcrumbs!. Mix!. Egg the chicken, let the excess drip off, then coat with the breadcrumbs!. It probably got stuck to the bottom of the pan b/c there was not enough oil in the pan!. I use olive oil because it gives it a better taste and is better for you!. When you take out the chicken from frying, place some paper towels in the dish to soak up the excess oil!. For a nice flavor, while the chicken is frying in the pan, add some white wine to the oil!.
