Question: Baking experts wanted: Icing Epidemic!?
I made this icing from a recipe and it's very smooth and light (as if it dissolves the moment you taste it), but you can crunch and feel the granulated sugar in it!. It's already quite sweet, so how do I make the granulate sugar less!.!.!.granuley!? haha maybe like crunchyish!?Www@FoodAQ@Com

Sounds like you made it with granulated sugar instead of confectioner's sugar!.

Here is a good recipe for frosting using granulated sugar:

Seven Minute Frosting
2 egg whites
1 1/2 cups white sugar
1/3 cup cold water
1 1/2 teaspoons light cornsyrup
1 teaspoon vanilla extract

1!. Put egg whites, sugar, water and syrup in top of double boiler!. Beat until mixed well!. Place over rapidly boiling water!. Beat constantly with electric beater while it cooks for 7 minutes or until it will stand in peaks when beater is raised!. Remove from heat!. Add vanilla!. Beat!. Fills and frosts 2 layer cake, 8 or 9 inch!.

Buttercream Icing

1/2 c!. Crisco shortening (highest grade)
1/2 tsp!. vanilla or other flavoring
1/4 tsp!. salt
1 drop buttercream flavor (optional)
4 tbsp!. water
1 lb!. powdered sugar, sifted

Mix shortening, flavoring, salt and buttercream flavor thoroughly together!. Add powdered sugar and water and mix with an electric mixer at top speed to whipped cream consistency, 5 minutes!. Keep sealed and in the refrigerator!. Add more water as needed!. This is decorator quality icing from a cake decorating class!.


Fluffy White Frosting

6 tbsp!. flour
1 c!. milk
1 c!. Crisco
1/4 c!. butter
1 c!. white sugar
1 tsp!. vanilla

Cook together until thick, 6 tablespoons flour and 1 cup milk; set aside until cool!. Do not put in ice box!. Do not put on warm cake!. Beat Crisco, butter, sugar, and vanilla until thick!. It will look like whipped cream!. Add to flour mixture!. Beat all together until smooth and fluffy!.Www@FoodAQ@Com

Using super-fine sugar would help-----I'm assuming that your recipe called for granulated sugar rather than powdered sugar!. Some recipes that call for granulated sugar take the extra step of cooking part of the ingredients to dissolve the sugar!.

If you still have the icing in a bowl, try adding a couple of teaspoons of milk and mixing the daylights out of it!.Www@FoodAQ@Com

Yeah, I think you used granulated sugar instead of confectioners sugar, that's why you have a crunch to it!. Didn't the recipe specify what kind of sugar!?Www@FoodAQ@Com

instead of using granualted use powered if you dont have any stick some granulated in a blender and pulse blend till powdered suger!. Www@FoodAQ@Com
