Answers:
I quite using those packet mixes because they have so much salt in them!.

I mix cumin, chili powder, and a little seasoned salt!. You can adjust it to your personal tastes that way!.Www@FoodAQ@Com

I just won first prize at our office chili cook off!. I only use chili powder(make sure you coat the meat with it after the meat is browned and before adding any other wet ingrediants)!. Then I add garlic, vinegar, salt and pepper!. I use chopped celery and onions (cook with meat) and S & W kidney beans ( put the liquid in as well)!. Chopped canned tomatoes and tomatoe sause, V-8, or tomatoe soup and you've got outstanding chili!. also add about 2 tablespoons of sugar!.
Good luck!!Www@FoodAQ@Com

I've never used a packaged chili seasoning mix!. I use chili powder (I have several kinds); paprika (plus smokey paprika); cumin (essential in chili); garlic salt; fresh pepper; Tony Chachere's Creole Seasoning (I use this in everything - it's a little like seasoned salt); Kosher salt !.!.!.!.!.And don't forget to put some fresh chopped cilantro in laterWww@FoodAQ@Com

Chile powder and cumin, cumin is the key!. also add salt, pepper and a little garlic powder!. When I make chili I use chile powder, a little chipotel chile powder, cumin, hot sauce, salt, pepper and a little garlic powder!. Www@FoodAQ@Com

I don't use the chili seasoning packets!.!.!.just the chili powder and I NEVER hear any complaints!.Www@FoodAQ@Com
