This is supposed to be a copycat from Bookbinder's and that's the best I've ever had so I'm giving you this one!.
Bookbinder's Philadelphia Snapper Soup

This is a traditional dish served at the famous Bookbinder's Restaurant in Philadelphia!. It should be made with turtle meat, but you can substitute lean stewing beef!. It will taste the same!.
1 pound turtle meat or lean stewing beef
1/4 cup butter
1/3 cup celery, diced
1/3 cup onion, diced
1/3 cup carrots, diced
1/3 cup flour
1 teaspoon paprika
1 quart beef stock
1/2 cup tomato puree
1 clove garlic, crushed
1/2 teaspoon allspice
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons cornstarch
1/2 cup water
1 teaspoon Worcestershire sauce
1 teaspoon parsley, chopped
1/3 cup cream sherry
1/4 teaspoon whole mixed pickling spice
Place turtle or beef in stock pot with 1 1/2 quarts water!. Bring to a boil!. Skim during cooking!. Simmer for 2 hours or until meat is tender!.
Strain meat from stock!. Dice meat into 1/4 inch pieces!. Set both aside!.
Cook vegetables in butter until onions are translucent!. Add beef stock!.
In a small bowl, mix 1/4 cup water into paprika and flour until smooth!. Add tomato puree and spices!. Stir into beef stock until well blended!. Bring to a boil; reduce heat, cover and simmer for 2 to 2 1/2 hours!.
Strain soup!. Place vegetables into food processor or blender and puree!.
Mix cornstarch with remaining water and blend until smooth!. Add to soup and cook 15 minutes, stirring, until stock is thickened!.
Add meat and vegetable puree!. Remove from direct heat!. Add sherry right before serving!.Www@FoodAQ@Com

2 Bay leaves
1 Garlic clove
Thyme, fresh; sprigs
Parsley, fresh; sprigs
Salt; to taste
Pepper; to taste
4 tb Butter
2 tb Flour
1/2 c Sherry
3 Egg; hard-cooked
Instructions
Cut off the turtle’s head and stand it upside-down to drain!.
After it has bled well, scrub with a stiff brush!.
Drop into a kettle of boiling water to cover, and cook until the skin and upper shell peel away easily!.
Discard this water and cover turtle with fresh water!.
Add the vegetables and herbs, and salt and pepper!.
Simmer gently for two hours then strain, reserving the broth!.
Remove shells and skin and pick out the meat, being careful not to break the gall sac (located in the liver)!.
Cut the meat into small pieces and brown in butter!.
Blend in the flour, then the strained stock and simmer it until tender!. To serve, pour into a tureen with the sherry and garnish with sliced eggs!.

turtle soup is not made from turtles that are being sold in pet shops or these giant behemots from the Galapagos islands!.They are bred in turtle farms, like pigs, bulls, chickens, crocodils, game or any other commercially used animal!. and are being killed and processed like
these as well!.
most of them come from Thailand by the way!. Controlled by the government, so nothing is in the soup that is not supposed to be there!.

TURTLES!?!!?!!? i've heard of turtle souup but why the hell would you be eating them!. do you not have like any sympathy for those animals!. i have a turtle even tho i hate it doesn't mean i would eat it and torture it!!! i still feed my turtle but i dont play with it cuz its slimy ><Www@FoodAQ@Com
