A regular vegetable soup recipe?!


Question: A regular vegetable soup recipe!?
Are there any plain vegetable soup recipes out there without meat, beans, noddles or potatoes!. I'm looking for a no frills low fat soup!.

2 bottles tomato juice
2 pkgs!. frozen mixed veggies
1 onion
2 stalks celery
Salt & pepper
Put all ingredients in a large saucepot and cook over medium heat until boiling!. Reduce heat and simmer until of consistency you desire!.

Ingredients
4 tablespoons olive oil
2 cups chopped leeks, white part only (from approximately 3 medium leeks)
2 tablespoons finely minced garlic
Kosher salt
2 cups carrots, peeled and chopped into rounds (approximately 2 medium)
2 cups peeled and diced potatoes
2 cups fresh green beans, broken or cut into 3/4-inch pieces
2 quarts chicken or vegetable broth
4 cups peeled, seeded, and chopped tomatoes
2 ears corn, kernels removed
1/2 teaspoon freshly ground black pepper
1/4 cup packed, chopped fresh parsley leaves
1 to 2 teaspoons freshly squeezed lemon juice
Directions
Heat the olive oil in large, heavy-bottomed stockpot over medium-low heat!. Once hot, add the leeks, garlic, and a pinch of salt and sweat until they begin to soften, approximately 7 to 8 minutes!. Add the carrots, potatoes, and green beans and continue to cook for 4 to 5 more minutes, stirring occasionally!.

Add the stock, increase the heat to high, and bring to a simmer!. Once simmering, add the tomatoes, corn kernels, and pepper!. Reduce the heat to low, cover, and cook until the vegetables are fork tender, approximately 25 to 30 minutes!. Remove from heat and add the parsley and lemon juice!. Season, to taste, with kosher salt!. Serve immediately!.

2 litres vegetable stock
2 tablespoon olive oil or cooking oil
3 stock celery chopped
1 small onion
3 cloves garlic
1 carrot cubed
1 tablespoon cilantro fresh or dry
3 bayleaves
salt and pepper to taste

5 cups finely chopped spinach


On high heat using a stock pot, put in cooking oil, and garlic and onions, and the rest of the vegetables except for spinach!.
Add stock slowly once vegetables are cooked!. And add cilantro, salt and pepper, and bayleaves!. Put on low heat to simmer!.

On a medium sized pot, grab the spinach and bring it to a boil with some of the soup stock!. Once it has a lumpy mixture, put in a food processor until it has a baby food consistency!. Put the mixture on the soup stock and cover while simmering for 1 hour on low heat!.

Yes your basic onion, carrot celery as your base!.
Coarsely chop an onion into a pot with a tablespoon of olive oil, heat add the onions then 1 crushed garlic don't let the garlic burn, add the chopped carrots and celery, four liters of water!. Bring to the boil for a few minutes, and turn the heat down to medium, add some seasoning now!. If you like Broccoli, cabbage Zucchini or baby marrow, Boc choy go for your life do it, except for the broccoli of course give the rest a rough chop!. Even if you have a ripe tomato or two and don't now what to do with it, blanch it, remove the skin, squeeze out the seeds give them a rough chop and throw that in as well, did I mention parsnips, there you go chop one or two of those in!.!.!.if you want to add a couple of beef or chicken stock cubes won't hurt, your looking for flavor!.

Check for seasoning again before you serve

jeepers creepers, you need a veg stock or its not broth its called hot water!. Carrots, onion, garlic, ginger, celery, broccoli, cabbage, kale, in any comb or just one!. Boiler up and getter done!.Www@FoodAQ@Com
