My dear, there are many kinds of sauces but it all depends on what kind of Fish you are preparing!. You can make Remoulade, Hollandaise, cream sauces, wine sauces, Mustard sauces, and simple Butter Lemon sauces!. Since your Halibut is kind of dry meat I would suggest a cream sauce!. For Sole or Flounder a simple Butter- Lemon sauce tastes good!. Www@FoodAQ@Com
