Eggplant recipe for a restricted diet?!
I am on a restricted diet but would love to make eggplant!. Unfortunately, the only way I know how to make it is with olive oil, eggs, sauce, bread crumbs, and cheese, which are all on the 'no' list (except olive oil, but I can only use not nearly enough for eggplant)!. Online recipe cites aren't much help either!.
Does anyone have a recipe that doesn't call for any tomato sauce, bread crumbs, or cheese!? It can have a very small amount of fat (olive oil, butter, etc) -- like just enough for a thin layer on the bottom of the pan or something!. Obviously, no frying!. Www@FoodAQ@Com

how bout baking!?grill then marinate eggplants with a little salt,pepper and other spices like 5spice,oregano and/or cayenne pepper,wrap them in spinach leaves or other leaves of your choice,bake them for 10 minuts,its ready!.yum!!Www@FoodAQ@Com
My mother just uses pan spray and fries slices of eggplant!. Then she adds whatever toppings she feels in the mood for!. I like to slice my eggplant thinly, put a little oil in the bottom of a pan, put the eggplant in and cover the pan, allowing the moisture from the eggplant help steam the slices!. I occasionally lift the lid and move the slices around so they don't burn!. When cooked, I just like to put a little ground pepper and sea salt on them!. I don't soak my eggplant in salt because I like the little tang they naturally have!.

grill it as a whole, them peel ir and mash it, season it with salt and pepper and mix some garlics, some chopped parsley !.!.

Eggplant curry! or stir fry in a little olive oil!.!.!.you can leave out the tomato sauce, can you have a freash cut tomato!? If so use that in the curry or stir fry!.!.!.Www@FoodAQ@Com
