Good African chicken recipes?!
I need some good african chicken recipes!. I would prefer if the recipe wasn't too unhealthy, and I know from experience many African dishes can both be very nutritious and very unhealthy!. If it could be just mildly spicy that would be perfect, although very spicy is good too!. also, I can't have it need more than one day to make!.Www@FoodAQ@Com

4 lb!. chicken pieces
1/4 c!. vegetable oil
1 tsp!. salt
1 tsp!. curry powder
1 lg!. onion, peeled and sliced
1 lg!. sweet red pepper, cut in strips
1 lg!. onion
1 lg!. sweet red pepper
1 lg!. tomato
1 1/2 c!. uncooked rice
1/4 c!. crunchy peanut butter
1/4 c!. warm water
Brown chicken in vegetable oil in large frying pan!. Set aside!. Remove all but 2 tablespoons of oil and drippings in pan!. Stir in curry powder and salt!. stir in onion, red pepper, and tomato!. Cover and simmer 5 minutes!. Return chicken to pan!. Cover!. Simmer until chicken is tender!. Remove chicken to large platter!. Blend peanut butter and water!. Stir in vegetables!. Heat to boiling!. Spoon over chicken!. Peanuts are common in the African cuisine!.

WEST AFRICAN PEANUT CHICKEN
3 lbs!. chicken breasts or thighs
1/2 c!. cooking oil
2 med!. onions, chopped
2-3 garlic cloves, chopped
SAUCE:
2 c!. chicken broth (heated to simmering)
1/2 c!. crunchy peanut butter
1 (6 oz!.) can tomato paste
Salt, pepper and red cayenne
Pepper to taste
Chopped peanuts
Preheat oven to 350 degrees!. Remove chicken skins; wash and pat dry!. Brown chicken in oil, a few pieces at a time, and remove from heat!. Brown onion and garlic; remove from heat!. Place chicken, onion, and garlic in casserole dish!.
In a medium bowl, blend chicken broth, peanut butter, and tomato paste!. Add seasonings and chopped peanuts; pour over chicken!. Bake covered, 45 minutes to 1 hour or until chicken is tender!. Serve over hot cooked rice!. Serves 4!.

AFRICAN APRICOT CHICKEN ON SKEWERS
3 lbs!. boneless chicken breasts, cut into 4 inch chunks
2 cloves garlic, minced
Salt and pepper to taste
4 med!. onions, finely chopped
2 tbsp!. oil
1 1/2 tsp!. coriander
1/2 tsp!. cumin
1 1/2 tsp!. hot curry powder
1 tbsp!. brown sugar
1/2 c!. fresh lemon juice
4 tbsp!. apricot jam
2 tbsp!. flour
30 dried apricot halves
1 onion, cut into 2 inch squares
2 bay leaves
In a large bowl, combine chicken pieces, garlic, salt and pepper; set aside!.
In a medium frying pan, fry onions in oil until golden!. Stir in coriander, cumin and curry powder!. Stir to coat onions, then add brown sugar, lemon juice and jam!. Add 1/2 cup water!. Bring to a boil, stirring constantly!. Remove from heat!. When cool, pour over chicken!. Add bay leaves and refrigerate overnight!.
The next day, thread meat with onions and apricots on skewers!. Grill over coals or broil in oven (7 minutes on each side)!. While meat grills, remove bay leaves from marinade and transfer it to a heavy pot!. Bring to a boil!. Serve over rice!. Serves 6!.

1/2 teaspoon ground coriander seeds

15 ounces canned tomato sauce
1 tablespoon red wine vinegar

After washing it, arrange the chicken in a large baking dish!. You can use breasts, thighs, or drumsticks--boneless or bone-in!. However, if you use bone-in pieces, eating the chicken will be substantially messier, although it will taste just as good! In a large skillet, heat the oil over medium-low heat!. Preheat the oven to 375 degrees F (190!.5 degrees C)!. Add the thinly sliced onions and minced garlic to the oil, and cook them gently, stirring often!. If you like garlic a lot, which I do, use 3 or 4 cloves; otherwise, use 2!. Once the onions have wilted, add the peanut butter, coriander, and red pepper flakes to the skillet!. Mix everything together well!. To intensify the sauce, you might want to add a dash of salt, a few dashes of black pepper, and an extra 1/2 tsp of red pepper flakes!. Once everything is mixed well, turn off the heat and pour the sauce into the baking dish over the chicken!. Place the uncovered dish in the oven and bake the chicken for about 40-45 minutes!. 4 broiler-fryer chicken drumsticks, skinned
4 broiler-fryer chicken thighs, skinned
Lime Sauce (recipe follows)
2 tablespoons olive oil
1 medium onion, chopped
5 cloves garlic, minced
3 cups chicken broth, warmed
2 tablespoons lime juice
3 carrots, sliced across
2 ribs celery, sliced across
1 (15-ounce) garbanzo beans, drained well
1 (14-ounce) artichoke hearts, drained well
Raisin Couscous (recipe follows)
1!. Spread Lime Sauce over chicken drumsticks and thighs and set aside about 15 minutes!.
2!. In large Dutch oven, pour olive oil and heat to medium high temperature!. Add chicken and cook about 5 minutes!. Turn chicken; add onion and garlic stirring as chicken continues to brown, about 5 minutes!. Pour chicken broth and lime juice over chicken; stir to loosen pan drippings!. Add carrots and bring to a boil!. Cover, reduce heat to low and simmer until chicken is tender, about 20 minutes!.
3!. Add celery and bring to a boil over high temperature!. Stir in garbanzo beans and gently place artichoke hearts across the top!. Cover, reduce heat to low and simmer 5 minutes more!. With slotted spoon, remove chicken and vegetables to warm serving bowl!. Skim off any fat in pan, boil juices about 5 minutes and pour into gravy boat with spout!.
