You seem to have enough tips for that, but will give you another tip for Bananas when storing them hang them they keep longer I use a basket for fruit with a high handle and can hang the bananas down from a hook!. they keep longer and don't increase the maturing of the other fruit!. Why!? bananas give off a gas which needs to escape naturally when doing increases the riping of the other fruit!. so store them the way nature intended (hanging) you can also buy hangers for bananas which sit on a work top!. another tip don't store tomatoes and peppers together in the fridge, they increase the maturing since they both give off the same gas since from the same family of fruitWww@FoodAQ@Com
run the bananas under hot water for about a minute before peeling!. once peeled dip the cut pieces into acidualted liquid such as pineapple juice!. or lemon juice and water!.
when making the pudding make sure the banana pieces are under the pudding and not on top!. The classic vanilla wafers on top is a good way to keep them down!.

Tossing in orange juice is good, but then you do get the orange taste, which does not meld well with the creamy banana taste!. Really, if the bananas are going to be totally mixed into the pudding, than the riper, the better!.Www@FoodAQ@Com
