Oooo! This one's easy :) Yes, freezer bags are the way to go!. Depending on how many people you have in your family, you need to choose the right size bag!. In our house, it's just my husband and myself so the quart freezer bags work great!.
Pour soup into the bag till almost full!. Start to seal the bag and when it almost sealed, push the top down a little bit so all the air comes out and the soup is ALMOST leaking out, then seal it up the rest of the way!. This gives it an opportunity to expand while freezing but with no air, you risk no freezer burn!.
To thaw, throw it in the fridge the night before you want to eat it!. The dinner time, it will be completely thawed and just heat it up!Www@FoodAQ@Com

Zip-lock bags can be nice, but I'd recommend only using quart-sized bags; if one should rupture it won't be such a HUGE mess!
I usually just freeze my soups in plastic stackable containers (again not more than quart-sized)!. The containers are nice because they don't tear, don't "squirm" all over the place till the contents are frozen and generally are just easier to deal with!.Www@FoodAQ@Com

Plastic containers would be good, leave some space for expansion!.
Zip-lock baggies will work, but think of the serving-size you'll need!.
Gallon would be too large unless you have commercial size pots!.Www@FoodAQ@Com

Use sealable containers or bags, but freeze in meal sized portions!.
You do not want to defrost a gallon, use enough for one and refreeze it!.
There are two of us so I freeze soups in 1 or 2 portion containers!.Www@FoodAQ@Com

Yeah, the bags work really weel!. I have mine stored in individual containers so I can bring them to work for single servings, versus having to defrost the whole thing!. This way I can use them as I need them!.Www@FoodAQ@Com
