How to make cookies chewy and not hard?!
My cookies are always hard! I don't over cook them, they are soft when i take them out of the oven but then later they are hard and crunchy!.
But it's only with snickerdoodles and cookies that are rolled in sugar, is the sugar whats making them hard!?!?!?!? Coz when i dont roll them in sugar they are ok!Www@FoodAQ@Com

bake them at a slightly lower temp on a cookie sheet with aluminum foil on it!. wait until they are completely cool to take them off the sheet!. like dont put them on a baking rack so air cant get under them!. if they are still a little hard or get hard in a few hours or so, put them in a cookie jar or box with a slice of bread!. the next morning!? perfectly soft cookies, just the way i like them!Www@FoodAQ@Com
Use margarine or shortening (crisco like product) rather than butter!. Butter has a lower melting temperature than the other products so it begins to melt and spread the cookie!. When cooling it crisps up rather than staying soft!.
Refrigerate the dough for about an hour prior to baking!. This will keep the cookie firmer longer and the cookie will not spread as easily!.
Use milk rather than water that is called for in the recipe!. This I have heard will also keep the cookie softer and moister!.
If you like the recipe that you are using and do not want to make any changes then I can only suggest the following:
The difference that you are finding in the two cookies you are making might be in the fact that when you roll the cookie in sugar the heat from your hand begins to soften the cookie before it gets to the oven!.

Try using Crisco instead of butter or margarine!. Use plain crisco (not the butter flavored, it tastes fake to me)!. It can be hard to measure, so if you need say 3/4 of a cup, add 1 cup water to a measuring cup, and add the Crisco until it reaches 1 3/4 cup!. Good Luck :)Www@FoodAQ@Com

if you use a flat cookie sheet (no edges), try using a jelly roll sheet ( a "cookie" sheet with edges)Www@FoodAQ@Com
