Rocky Mountain oysters (sometimes called prairie oysters) is a North American culinary name for edible offal, specifically buffalo, boar, or bull testicles!. They are usually peeled, coated in flour, pepper and salt, sometimes pounded flat, then deep-fried!. This delicacy is most often served as an appetizer!.[1]Www@FoodAQ@Com

As a former chef who has cooked them all are right except the cooking procedure does require them to be "Blanched", then sliced, floured or breaded and fried either in a pan with butter and oil or deep fried , usually served with a sauce with a kick like a mayo based on with horseradish, garlic and a bit of tabasco!.

There is no real taste, like eating a spongy piece of chicken breast, there is no real flavour, I have cooked them here in Canada, Jamaica and we did them once in Japan for a reception, we were a Canadian managed hotel and did a gourmet selection of North American foods!.Www@FoodAQ@Com
