You've got it right, cooking in a crock pot IS yum!.
Fortunately slow cooking softens the meat to a point of "falls off the bone" consistency you can use cheap cuts of meat!.
The cheap cuts are usually the muscles that the animal uses the most, i!.e!. legs, neck, rump and forelegs!. These muscles are tough but also the tastiest!. Cooking them for a long period will reward you with a lip smacking meal!. The secret is forget measurements, use what you have and success is almost always there!.
Here are a few suggestions:
Lamb shanks and chick peas stew
Simple Shanks (one per person)
medium can of chick peas drained
medium can of diced tomatoes
medium onion thinly sliced
2-3 cloves of garlic (no need to mince them as they'll disintegrate, crushing them is ok)
2 stalks of celery finely sliced
large carrot finely sliced
1 Lt!. beef or chicken stock (powdered stock is ok)
2-3 ea of fresh sprigs of thyme, oregano and rosemary!.
1-2 tsp paprika (sweet)
3-4 bay leaves
200 ml of red wine
Sear the shanks and put them in the pot turned on for low!.
In a pan, saute onions and garlic till transparent, add the the spices, celery and carrots!. sautee for another 5 minutes to soften the vegies!. Deglaze with the wine and let it reduce by half, add the tomatoes and cook for a further 5 minutes!.
Pour into the pot and add stock to cover the shanks!. Let cook overnight or 8-10 hours!.
If desired and you have room in the pot, add a couple of eggs (whole) the eggs will marblised and will taste heavenly!.
Serve on a bed of sauteed red pepper and corn kernels couscous!.
Another possibility is Goulash, using stewing steak meat, cubed (1/2 inch) cover with flower and brown in a pan and set aside!.
Sautee large onion (finely sliced) 2 minced garlic cloves together with 2-3 tbs paprika,
Add diced red and green peppers (1 ea) 2 carrots cut into small chunks
thyme sprig or two!. Deglaze the pan with a cup of rwd wine and let reduce by half!.
Combine the meat and vegies in a pot, set on medium or low, then cover with beef stock (powder stock is ok) add 2 tbs of tomato paste and let simmer for 2-3 hours for medium setting or 4-5 hours for low!. check regularly for liquid level!.
When liquid is thick (about half volume) add tmato paste if needed, salt and pepper to taste!.
Serve with garlic mash and fresh garden salad!. a glass of pinot noir will compliment this meal fabulously!.
the combinations are limitless you can use any cheap cuts of beef, lamb or pork for great results!.
