1 medium chopped onion
1 cup chopped celery
1/4 teaspoon poultry seasoning

* 3 1/2 lbs boneless chicken breasts, cut into chunks (you should get about 6-7 dozen pieces) !.
* 2 c cornstarch !.
* 2 2/3 c cold water !.
* 2 tbsps soy sauce !.
* 1 (14 oz) can sliced tomatoes, undrained !.
* 1 large onion, finely sliced !.

* Step #6 To make the chicken balls: in a bowl mix flour, baking powder, baking soda, cornstarch, sugar & water until smooth!.
* Step #7 Heat oil in a deep-fryer or Dutch oven to 375 degrees!.
* Step #8 Dip the chicken pieces into the batter, then drop in hot oil & fry until golden & the juices run clear (about 5 mins)!.
* Step #9 Remove to a paper towel!.
* Step #10 Sprinkle top with seasoning salt as soon as possible after frying if desired!.
