Question: Any ideas on what to make for Breakfast for church!?

Whenever we had overnight guests my Mom would make a one pan breakfast!. She would combine eggs, sausage or bacon, potatoes, cheese, onions, green peppers, a little milk, butter etc!. Then cook it in an electric skillet low and slow!. In about 20 minutes it was done!. No big mess to clean up!. You can use canned sliced white potatoes, precooked sausage or bacon to speed up the cooking time!. She also served blueberry muffins instead of toast!. I miss that!! Www@FoodAQ@Com

One Stop Breakfast Casserole

Ingredients

8 ounces breakfast sausage or bulk sausage, casing removed
2 large shallots, minced (about 1/3 cup)
1 tablespoon butter
12 to 16 1/2-inch-thick slices of day-old French bread (toast lightly if fresh)
6 ounces shredded cheese, such as Monterey Jack, Cheddar or Swiss (1 1/2 cups)
10 large eggs
2 1/2 cups half-and-half
1/2 teaspoon salt
1/4 teaspoon ground white pepper

Directions

Heat the skillet over medium heat and, when hot, add the sausage!. Cook until sausage begins to brown, breaking it into small pieces with a wooden spoon, about 4 minutes!. Add the shallots to the skillet and continue to cook until meat is golden brown and the shallots are soft, about two minutes longer!. Remove the skillet from the heat and set aside!. Butter a 9-inch square baking dish and line the bottom with half of the bread slices!. Top the bread slices with half of the sausage-shallot mixture and half of the grated cheese!. Make another layer with the remaining bread, sausage, and cheese!.

In a mixing bowl, combine the eggs, half-and-half, salt and pepper, and whisk to combine!. Pour the egg mixture evenly over the layered bread mixture!. Cover with plastic wrap and refrigerate for at least one hour and up to overnight!.

Remove the casserole from the refrigerator and allow to come to room temperature for about 20 minutes!. Position rack in center of oven and preheat the oven to 325° F!.

Remove the plastic wrap and bake the casserole, uncovered, until puffed and golden brown, about one hour!. Using oven mitts or pot holders, remove the casserole from the oven and let rest for five minutes before serving!.

Do a variety of simply sandwiches cut into triangles or fingers!.
Sandwiches:- Double Deckers!.
3 Slices of bread!.
Tomato!. Sliced
Cold Meat!.
Seasonings!.
Spread bread!.
Place fillings on two of the slices of bread and season!.
Stack one on top of the other and top with the third slice, spread side down and cut into diagonals or cubes!.

Banana, Mashed or Sliced!.
Beef & Tomato!.
Celery & Cheese!.
Cheese & Ham!. (mustard)
Cheese & Mustard Pickles!.
Cheese & Vegemite!. (finely sliced onion optional)

Corned Beef & Tomato Sauce!.
Cucumber!.
Egg!.
Egg & Tomato!.
Fish Paste!.
Grated Carrot!.
Ham!.
Ham & Pineapple!.
Honey!.
Jams!.
Lettuce!.
Lettuce & Vegemite!.
Marmalade!.
Peanut Butter & Jam!.

Sardines & Lemon Juice!.

Club sandwiches!. 3 fillings between 4 slices of bread!. Cut into fingers or cubes!.
Pinwheels!.
Lay an assortment of fillings across the bread and roll up!.
For the Club Sandwiches and Pinwheels use bread that is sliced length ways!.
Rolls!. Wrap Asparagus spears, Seafood sticks, Shredded chicken, etc in a slice of bread at the diagonal!.

Breakfast casseroles are always popular at church breakfasts!. You know the kind!. With eggs, hashbrowns, sausage, cheese, and such!. And they usually can be made the night before and kept in the fridge and baked off the next right before serving!. I don't have a recipe handy, but there are tons of them on different cooking sites!. Just find one that sounds good and whip it up the night before!Www@FoodAQ@Com

It needs to be big, tasty and easily kept!. I'd do a load of scrambled egg with bacon and tomato chopped and mixed in!. Keep it warm and serve with hot toast!.Www@FoodAQ@Com
