Is chicken stock dirty?!
I'm cooking right now and I'm using chicken broth and I just realize that what's the difference in both of them; like which one is better!. I read some of the resolved questions about their difference and found that chicken stock has more nutrients and is better, and I just found out that it's made out of bones!. Is the chicken stock dirty!? I know this is a silly question, but I just want to know!.Www@FoodAQ@Com

Chicken stock should be clear and free of scum and other impurities including dried herbs etc!.
Best way to "clean" it is by sieving it through a clean tea towel when you finished cooking it!.
Stock is what you get here, broth or consomme is further "cleaning the stock by simmering it with a mixture of minced chicken egg whites!. the mixture forms a "raft" over the stock and "swallows" most of the fat and any other impurity that the previous procccess let through!. then you ladel the broth very carefully!. That's how chicken stock or broth is made!. By boiling the chicken with the bones!. In the case of home made soup usually you have eaten the meat for dinner and you throw the bones in a pot of water and cook them to make broth or stock!. I don't think it would be dirty whether is is commercially or home made!. Of course it would depend on the state of your kitchen - ha ha!.Www@FoodAQ@Com
If you mean it is cloudy, it is normal, usually they make chicken stock by boil chicken bones, and if you want it clear put some egg white before turn off heat and drain it with very fine sieve, but you use the stock for cooking it is alright it it is cloudy!.Good luck!.Www@FoodAQ@Com
i`ve been a professional chef for 19 years and if your stock is dirty then you`ve boiled it instead of simmering it (then its cloudy) or it`s needing clarified with one or two eggshells - just pop them in for a couple of minutes - as a tip chill overnight in the fridge then take the solid fat off the topWww@FoodAQ@Com
Hard to believe, but they are both the same!. Stock/broth is a liquid made by cooking vegetables and meat in water for a long time!. Then used as a base for soups!. As for the dirty part, not really sure what you meant, but I’m going too guess it depends on the cook!.Www@FoodAQ@Com
