I made this; my boyfriend loved it, but I thought it could use some orange/yellow cheese!. Still, not bad if you like mac & cheese!

WISCONSIN FIVE-CHEESE BAKED LASAGNA

INGREDIENTS
1 (16 ounce) package elbow macaroni
1 cup shredded mozzarella cheese
1 cup shredded Swiss cheese
1 cup grated Parmesan cheese
1 cup shredded provolone cheese
1/2 cup ricotta cheese
1/2 cup sour cream
1/2 cup heavy cream
1 tablespoon chopped fresh parsley
1/2 teaspoon dried Italian seasoning
1/2 teaspoon garlic salt

DIRECTIONS
1!. Preheat the oven to 400 degrees F (200 degrees C)!. Bring a large pot of lightly salted water to a boil!. Add macaroni, and cook until tender, 6 to 8 minutes!. Drain!.
2 In a large bowl, toss together the mozzarella cheese, Swiss cheese, Parmesan cheese and Provolone cheese!. Remove about 1/2 cup for topping and set aside!. In a separate bowl, stir together the ricotta cheese, sour cream and heavy cream!. Season with parsley, Italian seasoning and garlic salt!.
3!. Pour the ricotta cheese mixture and drained macaroni into the bowl with the cheeses and toss lightly!. Do not mix too thoroughly, it's better left messy!. Pour into the prepared baking dish!. Sprinkle the reserved cheese over the top!.
4!. Bake in the preheated oven until cheese is melted, about 10 minutes, then turn the oven to broil!. Broil for about 5 minutes to brown the top!.Www@FoodAQ@Com

SPINACH CHEESE PIE – Epicurious 1980
ingredients
1 refrigerated pie crust (half of 15-ounce package), room temperature
1 teaspoon all purpose flour
3 tablespoons butter
1 medium onion, chopped
1 10-ounce package frozen chopped spinach, thawed, squeezed dry
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground nutmeg
1 15-ounce container ricotta cheese
8 ounce mozzarella cheese, grated
1 cup grated Parmesan cheese
3 large eggs, beaten to blend

preparation
Preheat oven to 350°F!. Unfold pie crust!. Press out fold lines; if crust cracks, wet fingers and push edges together to seal!. Sprinkle flour over crust!. Place crust floured side down in 9-inch-diameter glass or ceramic pie dish!. Fold edge under and crimp decoratively!.
Melt butter in heavy large skillet over medium heat!. Add onion and sauté until tender, about 8 minutes!. Mix in spinach, salt, pepper and nutmeg!. Sauté until all liquid from spinach evaporates, about 3 minutes!.
Combine ricotta, mozzarella and Parmesan cheeses in large bowl!. Mix in eggs!. Add spinach mixture; blend well!.
Spoon cheese mixture into pie crust!. Bake until filling is set in center and brown on top, about 40 minutes!. Let stand 10 minutes!. Cut pie into wedges!.

You know that we bought a big ricotta from the market and then we wanted to make something different with it!. I called the number on the back to see if they had any recipes other than the same lasagna ones!. They said they did not so I thought I'd make something up!. This is what I came up with!.
I took the ricotta and put in a sauce pan with some milk and melted it!. I seasoned it with salt pepper garlic salt chives!. I added some cheddar cheese and when it was creamy enough, I poured it over some boiled potatoes that I cut into cubes!. It went fast!. It also has been used since then for noodles!.
