Why do my sponge cakes always sink after i take them out of the oven ?!

There are a number of reasons to why your sponges may be sinking theses are as follows:
The cake may not be cooked for long enough
Your oven may not be the correct temperature so we recommend that you test it with an oven thermometer!.
also the oven door may have been opened before the cake has set causing the cake to collapse!.
The mixture also may not have been beaten thoroughly enough or there might have been too little flour or too many eggs!.

Possiblt not cooked fully, try not to open the oven door too often during cooking because that wont help!. The other reasons could be not enough flour(the flours starch when cooked stiffens the sponge up along with protein in the eggs!.
A good basic recipe is:
100g Sugar creamed with 100g margarine or butter(don't use low fat marg as it doesn't give a good result)!.
Add 2 eggs gradually whilst whisking continually!. Then add 100g of plain flour(with 15g of baking Powder sieved into the flour or just use 100g of self raising flour) & mix in with a spoon!.

They sink because as the cake cools, the air in the cake cools which lowers the air molecules energy and hence the pressure keeping it risen (I think)!.
If it's sinking drastically you might need to add some more bicarb to your flour!.
also don't slam the oven door!.

Xena, maybe you should not scowl at them, as this makes you look too fierce and the cakes quail in fright!.
It is probably because they are not totally done!. Let them stay in the oven for about 3 more minutes!.
