First off!.!.!.you probably shouldn't be slow cooking a london broil!. Unfortunately it is too lean a cut of beef to stand up to long braises!. In order to slow cook something effectively it should have enough connective tissue to be broken down in the cooking process to make the meat tender!.
If I was to braise a london broil I would first thouroughly season the meat (salt and pepper), then sear it off in a large skillet at very high heat to carmelize the outside in order to give it additional flavor!. Next you could transfer the london broil to a heavy pot or a dutch oven, cover with beef stock (or broth) and add some large chunks of onion celery carrot and garlic and any other herbs you might like (experiment)!. Once this comes to boil, reduce heat so that the liquid is at a nice simmer and cook for 2 hours or to the doneness you would like!. Be carefull not to overcook, just because you are cooking in liquid does not mean the meat will not get dry and tough!. Good luck to you!Www@FoodAQ@Com

I prefer to grill london broil, but if your going to slow cook it, I'd go for 5 hours!.!. thats the usual time I use to braise beef!. You can take the braising juices and reduce them to make a sauce!.Www@FoodAQ@Com
