How do l stop my sauce spoiling ?!
We love hollandaise sauce in my family, so I would like to prepare large batches at a time, but it always curdles when I re-heat it!. What am I doing wrong!?Www@FoodAQ@Com

Hollandaise isn't a good sauce to prepare in advance!. Because the oil and water components have different densities, they will separate on standing or refrigeration!.
If you really must revive a curdled hollandaise, try whisking in another egg yolk before serving!. The sauce won't be quite as light as usual, but it will still be good!.Www@FoodAQ@Com
