With so many safety concerns about cooking chicken, how to tell when it's properly cooked? ?!

There are three tests I use:1 Pierce the thickest part of the thigh with a thin skewer – the juices running out should be golden and clear, not pink!.2 If the juices are golden and clear, then gently tug the leg away from the body – if it 'gives', then the chicken is ready!.3 If the chicken is not stuffed, tip it up and look at the juices running from the body cavity – as before, they should be golden and clear!. Basically it depends on the cut:
If it is a whole chicken you want to bake or stew it so that it stays moist!. You can cut in at the thigh and if the juices run clear then it is done!.
Still, I think chicken tastes best when it is really done!. You can tell this because the meat will usually detach or come apart easily!.
If it is chicken breast then you really have to cook it a while, I like to steam them in wine, then I cut one in half before serving just to be sure!. If the meat is still pink inside, then it isn't cooked enough!.

The easiest way to figure out if it's done all the way (without tearing apart the chicken), is to use a meat thermometer!. Test it in the meatiest part of the chicken (usually in the thigh) and the internal temp should read between 165-170 degrees!. This is the best way to make sure it's done!.
