Whenever we have roast duck there's always a lot of fat left. Is there a use for it? ?!
Answers:
Spread it all over your body and you will never feel the cold again --- unfortunately you will stink to high heaven and be liable to be shot in mistake for a duck!.Www@FoodAQ@Com
Ohhhhhh yes!
One of the favorite French delicacies is potatoes roasted in duck fat!
1 pound potatoes peeled
3 tbsps duck fat or pan drippings
3 cloves garlic finely sliced
2 tbsps chopped parsley
Procedure:
Wipe the potatoes and cut them into chunks!. Heat the duck fat in a shallow pan then put in the potatoes!. Season generously with salt and continue cooking for about 10 minutes over a moderate heat before turning!.
Lower the heat and cook for a further 30 minutes turning from time to time so that they crisp on all sides!. When they are almost done stir in the sliced garlic and parsley and season with a little black pepper!.
Not good for you every day, but delish nonetheless!Www@FoodAQ@Com

You can mix duck fat with blanched pounded garlic!. It is known as Gascony butter and is used to flavour soups and cassoulet and can be spread onto croutons!.
You could also use it to make pie crust for a savory meat pie!.
