One of the favorite French delicacies is potatoes roasted in duck fat!

1 pound potatoes peeled
3 tbsps duck fat or pan drippings
3 cloves garlic finely sliced
2 tbsps chopped parsley
Procedure:

Wipe the potatoes and cut them into chunks!. Heat the duck fat in a shallow pan then put in the potatoes!. Season generously with salt and continue cooking for about 10 minutes over a moderate heat before turning!.

Lower the heat and cook for a further 30 minutes turning from time to time so that they crisp on all sides!. When they are almost done stir in the sliced garlic and parsley and season with a little black pepper!.

you mean the rendered fat at the bottom of the pan!? you can save it in a jar/can and use it for anything!. just store it in the fridge, and i'm not sure how long it'll stay fresh!.!.
roast potatoes and veggies in it!.!.make anything you would use bacon grease to make!.!.anything roasted, sauteed or fried!.!.!.!.
I roasted some potatoes and carrots in fresh duck fat once, and it tasted greasier than in veggie oil!.!.i didn't care for it and it's terrible for you, so personally I would just recommend throwing it away!. although many foodies would be very mad at me for saying that :)Www@FoodAQ@Com

You can mix duck fat with blanched pounded garlic!. It is known as Gascony butter and is used to flavour soups and cassoulet and can be spread onto croutons!.

You could also use it to make pie crust for a savory meat pie!.

The fat left over after roasting duck is excellent for cooking so hang on to it!. It is especially good for roasting potatoes!. Try my Oven-roasted potatoes with Garlic and Rosemary and just substitute the olive oil with duck fat!.Www@FoodAQ@Com
