Can you prepare a flour-based sauce in advance, but give it that 'just made' quality when you serve the mea?!

Ingredients
The meatballs:
500g Waitrose Farmhouse or Waitrose British Ground Pork
? medium onion, peeled and finely chopped
55g fresh white breadcrumbs
? tsp ground cumin
Pepper
25g plain flour
1 tbsp olive or sunflower oil
? tsp ground coriander
Salt
1tbsp fresh coriander, chopped
The sauce:
Pepper
2tbsp olive oil
1 small onion, peeled and chopped
1 x 400g can Waitrose Italian Tomatoes, roughly chopped
? tsp ground coriander
? tsp ground paprika
Salt
1 tbsp fresh coriander
Method
To make the meatballs, place all the ingredients, except the flour and oil, into a bowl and thoroughly mix!. Sprinkle a little flour onto the work surface, make 16 balls with the meat mixture and roll them in flour!.
Heat the oil and gently fry the meatballs for about 6-8 minutes or until brown!. Transfer to a warm plate!.
To make the sauce, place the olive oil and onion in a pan and cook until the onion is soft!. Add the tomatoes with their juices and the remaining ingredients and simmer for 3-4 minutes!.
Place the meatballs in the sauce and continue simmering for a further 4-5 minutes or until thoroughly cooked and there is no pink meat!. If the sauce is too thick, add a little water!.
Serve immediately!.

yes after making the sauce you need to cover it with a 'cartouche'!. This is a piece of greaseproff paper that is cut to just a bit larger than the size of the pan that has the sauce in it!. Make sure you lightly grease the greaseproof(trust me) when you come to serve up remove the cartouche & stir/whisk the gravy whilst gently reheating!. The greaseproof stops the sauce from forming a thick skin!.Www@FoodAQ@Com
yup, many people do it all the time!. Flour based sauces actually reconstitute pretty well!. Just do not thin them down till they have come to full temp as they might end up too thin then!.Www@FoodAQ@Com
