My mom is from Central America, and she always soaked and preserved her own peppers in mason jars on the window sills!. I'm talking like 8 months!.!.!. and when she felt they were ready, she'd opened a jar and prepare them in a stew!. They would be so potent that, as you walked into the house and smelled the food cooking, the aroma would burn your nostrils! (Mixed with ingredients from very old-world recipes)!.
How my parents digested this type of hellfire cuisine is beyond me!. But the old folks must have cast-iron stomachs!. They are both now in their late 70's and 80's and still eat hot, a$$-burnin' food, like the psychotic natives they are!Www@FoodAQ@Com
