Traditionally Southern food came about mostly out of necessity!. Some of the best foods were made from the cheapest ingredients!. Mainly slaves and the poor ate these foods such as fried chicken, hoe cakes, scrapple, chittlin's, collard/turnip/mustard greens, etc!. Sugar was a commodity and was usually replaced with molasses or not used at all ( which is why biscuits in the south aren't sweet like they are up north) With the onset of the Great Depression the culinary creativity in the South only intensified!. From my own family history, recipes like Tomato Soup Cake and Supper on a Loaf, both recipes that use a smorgasbord of ingredients and are easily adaptable to whats on hand!. In short, the true beauty of Southern cooking comes not from the ingredients but from the amazing flavor that our ancestors were able to put into the meager supply that they had!. Flavors so good in fact that many thrive to this day!. Www@FoodAQ@Com

Certain dishes are popular in certain regions based on the availability of items!. Therefore, those items were used to come up with dishes that are now commonly associated with those regions!.Www@FoodAQ@Com
