I have to do a cooking presentation that uses yams as the main ingredient !.

On the downside, they're not as rich in vitamins A and C as sweet potatoes!. There are over 150 species of yam grown throughout the world!. The fact that these babies can grow to be 7 1/2 feet long and weigh the size of a young boy is something that would be very interesting to your audience!

Ingredients
1/2 cup flour
1/2 cup quick-cooking oat
1/2 cup packed brown sugar
1 teaspoon cinnamon
1/3 cup margarine
2 (12 ounce) cans yams (drained)
2 cups cranberries (optional)
1 1/2 cups marshmallows
Directions
1Combine Flour Brown Sugar, Oats and Cinnamon In Bowl!.
2Cut In Margarine Until Crumbly!.
3Mix 1 Cup Oat mixture with Yams and Cranberries in 1 1/2 Quart Casserole Dish!.
4Top With Remaining Mixture!.
5Bake at 350 !. 30 to 35 Minutes!.

* 1 (1 pound) sweet potato
* 1/2 cup butter, softened
* 1 cup white sugar
* 1/2 cup milk
* 2 eggs
* 1/2 teaspoon ground nutmeg
* 1/2 teaspoon ground cinnamon
* 1 teaspoon vanilla extract
* 1 (9 inch) unbaked pie crust

DIRECTIONS

1!. Boil sweet potato whole in skin for 40 to 50 minutes, or until done!. Run cold water over the sweet potato, and remove the skin!.
2!. Break apart sweet potato in a bowl!. Add butter, and mix well with mixer!. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla!. Beat on medium speed until mixture is smooth!. Pour filling into an unbaked pie crust!.
3!. Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean!. Pie will puff up like a souffle, and then will sink down as it cools!.

Candied Yams
Ingredients
1/4 cup butter
2 teaspoons vanilla extract
1/4 teaspoon salt
1 cup granulated sugar
1 cup firmly packed brown sugar
4 pounds sweet potatoes, peeled and cut into 1/2-inch-thick slices
2 tablespoons cornstarch
Preparation

1!. Microwave butter in a microwave-safe bowl at HIGH 30 seconds to 1 minute or until melted; stir in vanilla and salt!.

2!. Stir together granulated sugar and brown sugar in a medium bowl!.

3!. Layer potatoes and sugar mixture in a lightly greased 6-qt!. slow cooker, beginning with potatoes and ending with sugar mixture!. Pour butter mixture over top!. Cover and cook on LOW 4 hours or until potatoes are tender!.

4!. Transfer potatoes to a serving dish using a slotted spoon, reserving liquid in slow cooker!. Keep potatoes warm!.

5!. Remove 1/3 cup liquid from slow cooker; whisk cornstarch into 1/3 cup liquid until smooth!. Carefully pour remaining liquid from slow cooker into a medium saucepan!. Whisk in cornstarch mixture!. Bring to a boil over medium heat; cook 1 to 2 minutes or until thickened!. Pour over potatoes!. Serve immediately!.



Yam Nuea Yang (Spicy Beef Salad)

How about grilling them!?

slice your washed fresh yams about 3/4 inch thick, and grill on a george foreman, or on a charcole grill!. You could also coat them in oil, salt and pepper and bake them like you do red potatoes!.Www@FoodAQ@Com
