Question: How do I make a good onion casserole!? !?
Answers:
I got this recipe from Gourmet magazine quite awhile ago and have used it every Thanksgiving for years!.

It’s also a yummy side for roast beef!.

Chrysanthemum Onions

16 sm Yellow onions (each about 2"
-in diameter)
1 ts Sugar
1/4 c Chicken broth
3 tb Unsalted butter

Preheat oven to 450 degrees F!.

With a sharp knife trim root end of each onion flat so that it is still
intact but will stand on end!. Standing each onion on its root end, cut
parallel vertical slices at 1/4-inch intervals into but not through onion,
stopping about 3/4-inch above root end!. Rotate each onion 90 degrees and
cut parallel vertical slices in same manner to form a crosshatch pattern,
keeping onions intact!.

In a lightly buttered shallow baking dish large enough to let onions open,
or "flower," put onions, root ends down, and sprinkle with sugar and salt
to taste!.

In a small saucepan heat broth and butter over moderately high heat until
butter is melted and pour over onions!. Cover onions with foil and roast in
middle of oven 45 minutes, or until tender!. Remove foil and roast onions,
basting occasionally, 30 to 45 minutes more, or until golden!. Onions may be
made 1 day ahead and chilled, covered!. Reheat onions before serving!.

Mom's Yummy Onion Casserole --


"My Mother used to always make this casserole on holidays!. It was always a hit!"





INGREDIENTS
1/4 cup butter
9 large onions, sliced
1 (7 ounce) bag sour cream-and-onion-flavored potato chips, crushed
1 cube beef bouillon
1/2 cup water
1 (10!.75 ounce) can condensed cream of mushroom soup
2 cups shredded Cheddar cheese



DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!. Grease a 9x13 inch baking dish!.
Melt butter in a large skillet over medium-high heat!. Saute onions until tender!. Transfer to prepared dish and top with crushed potato chips!.
Dissolve bouillon in water and mix with mushroom soup; pour over chips and onions!. Top with cheese!.
Bake in preheated oven for 25 to 30 minutes!.Www@FoodAQ@Com

Use Vidalia onions or your favorite sweet onions for this casserole recipe!.
Cook Time: 25 minutes
Ingredients:

* 1 pound sweet onions, sliced into rings and separated (Vidalia or other type of sweet onions)
* 1 egg, beaten
* 1 cup heavy cream
* 3/4 teaspoons salt
* 1/2 teaspoon ground black pepper
* 1/2 cup shredded Cheddar cheese
* paprika

Preparation:
Place onion slices in a medium saucepan; cover with water!. Bring to a boil; boil for 1 minute!. Drain onions; transfer to an 8-inch square baking dish!. In a small bowl combine egg, cream, salt and pepper; pour mixture over onions!. Sprinkle with cheese and paprika!. Bake for 25 minutes at 350°!.
