What can I make with ONLY 2 brown bananas?!
If I had more I would go to the obvious banana bread or muffins, but I only have 2!. If someone has a recipe for a scaled down recipe (like only 3-4 muffins) maybe that would work!?
I figure someone out here has a great idea of something completely different to make though!. I do have some apples, strawberries, frozen blueberries, frozen cherries, frozen pineapple, grapes and apple sauce on hand if you have some other crazy fruit concoction!. Oatmeal, walnuts, and spices!.

* 3/4 cup sugar
* 1/2 cup margarine or butter, softened
* 2 eggs
* 1 cup mashed ripe banana (2 medium)
* 1/3 cup milk
* 1 teaspoon vanilla
* 2 cups all-purpose flour
* 1/2 cup chopped nuts (optional)
* 1 teaspoon baking soda
* 1/2 teaspoon salt
Directions
1 Heat oven to 350°, grease bottom only of 9 x 5 or 8 x 4 inch loaf pan!.
2!. In a large bowl, combine the sugar and margarine, and beat until light and fluffy!.
3!. Add the eggs and beat well, then add the bananas, milk and vanilla--blending well!.
4!. In a small bowl, combine the flour, nuts (if using), baking soda and salt--mix well!.
5!. Add to the banana mixture, and stir just until dry ingredients are moistened!.
6!. Pour into the prepared pan!.
7!. Bake at 350° for 50-60 minutes or until tester inserted in center comes out clean!.
8!. Cool 5 minutes, then remove from pan!.
9!. Wrap and store in refrigerator
