Toffee Apples, advice required...?!
!.!.!.!.!.!.I've had a few attempts at toffee apples and have perfected it so the toffee is a nice glaze the same as Toffee apples that you buy!. The toffee tastes like it should, but its chewy as opposed to the crisp sugar glass consistency of the ones you buy at the fair!.!.!.any ideas !?

You have to get it to the 'hard ball' stage!.!.!.about 300 degrees (sorry , as many Americans, hopeless with celcius)!.!.!.Make sure you used salted butter, too!.!.or add a bit of salt!.!.

you need a toffee ( candy) thermometer!.!.!. the sugar needs to reach a temperature of 146-154°C or it will stay soft!. Next time turn the heat up and let it cook for longer until nearly no liquid is left!. Then drop a small spoonful of syrup into cold water, if the ball ball of sugar is so brittle that the rapid cooling from the water literally causes it to crack its perfectWww@FoodAQ@Com
i believe its in the recipe, with the butter, i add 2-3 tbl spns water and a pinch of cream of tarter , and mine come out crunchy!. give it a try you have nothing to lose they are still scrummyWww@FoodAQ@Com
