Scallops tend to become very rubbery if you cook them for a long time!. They best way to cook scallops is to sear them!. Make sure you get nice big ones (they should be about and inch thick at least, and NOT water packed as they will just shrivel if they are)!.

Lightly season them (bit of salt and pepper, maybe some cajun spices), and sear them in a nonstick pan with a bit of oil in it on med-high (make sure you can hear the sizzle) for about 3 minutes per side max!. They should be nice and warm in the middle, but not rubbery (should have the consistency of a nice sashimi)!.

This is a super good recipe, my husband and I make it a lot!

Grilled Scallop Ceviche
Special equipment: 5 metal or wooden skewers (if using wooden, soak in water 30 minutes)
1 1/2 pounds large sea scallops (about 20), tough ligament removed from side of each if attached
3 tablespoons extra-virgin olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 navel orange
2 tablespoons fresh lime juice
3/4 seedless cucumber (usually plastic-wrapped), halved lengthwise, cored, and thinly sliced (2 cups)
2 tablespoons thinly sliced shallot
1 to 2 teaspoons finely chopped fresh jalape?o chile, including seeds
1/4 cup chopped fresh cilantro
Toss scallops with 1 tablespoon oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a bowl, then thread 4 scallops onto each skewer!.
Prepare grill for direct-heat cooking over high heat!.
Oil grill rack, then grill scallops, covered only if using a gas grill, turning over once, until just cooked through, about 5 minutes!.
Transfer to a plate and cool slightly!.
While scallops cool, cut peel, including white pith, from orange with a sharp paring knife, then cut segments free from membranes!.
Coarsely chop enough segments to measure 1/4 cup and transfer to a large bowl (reserve remaining orange for another use)!.
Stir in lime juice, cucumber, shallot, jalape?o (to taste), and remaining 2 tablespoons oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper!.
When scallops are cool enough to handle, halve each crosswise (quarter if large), then add to cucumber mixture, tossing to combine!.
Marinate, covered and chilled, until cold, at least 1 hour!. Just before serving, stir in cilantro!.

Put oil in frying pan and wait for it to get hot

Up salt and pepper on the scallops and put them in the frying pan
after about 90 seconds flip them over!. and let them cool for that long again!. and then are done!.

There is nothing better!. Even places like Morton's cook them this way!.

also the best place to buy them is loose from the fresh sea food section of the grocery story don't buy frozen, and make sure to pull of the tinny mussel on the side!.Www@FoodAQ@Com

BAKED SCALLOPS WITH MUSHROOMS

1 pt!. scallops (1 lb!.)
1/2 lb!. mushrooms
1/2 c!. butter
1/2 tsp!. salt
1 c!. light cream
2 tbsp!. flour
1/2 tsp!. ground pepper
1/2 c!. dry bread crumbs

Clean scallops!. Wash and slice mushrooms!. Melt 2 teaspoons butter and saute mushrooms for 5 minutes!. Make cream sauce with 2 tablespoons butter and 2 tablespoons flour!. Cook 5 minutes!. Slowly add cream, salt and pepper!. Melt remaining butter and saute bread crumbs!. Combine scallops with mushroom and cream sauce!. Place in shallow buttered baking dish!. Top with buttered crumbs!. Bake at 350 degrees for 35 minutes!. Add nutmeg and white wine, perhaps toasted almonds slivers, too!.

try this!. pan sear the scallops as every one says then in a bowl take some ritz or any butter crumb crackers crush them good add some lump crab ,parm!. cheese, scallions diced,garlic(fresh chopped or granulated),S&P,a good amount of melted butter and mix so you have a nice moist crumb mix!. in a small baking dish arrange your scallops in a tight circle top with the crumbs the top that with shredded cheddar and a bit of paprika for color bake at 350 for about 15-20 min!. then enjoyWww@FoodAQ@Com
