/kraut fermentation proscess, help!!?!
WELL, i already salted cabbage in kraut, put plate on it and weight!. The brine rised quite above the plate, does that mean i take off the weights to let ferment!? thanksWww@FoodAQ@Com

No, you don't take off the weight!. If the brine flows over, skim some off, but it always should cover the kraut!.
