What are some good recipes that involve boiled quail eggs?!
Usually I put them in gumbo but I accidentally opened the can early!.

Answers:
Quali egg korma, a north bengali/assamese recipe, and really easy!.
If you have about 16 eggs, first hard boil egg, peel and place aside!. Then in blender/food processor add the following and blend to a smooth paste;
1 medium onion, 1 clve garlic, 1/2 inch ginger (or 1 tspn ginger/garlic paste), 1 small roma tomato, 2 green chilli, 1 tspn plain yogurt, a few sprigs cilantro!.
In hot nonstick pan, add some oil, or preferably ghee(indian clarified butter)!. When hot, add the mixture and stir well, and add salt, black pepper to season!. Then add;
1 cinnamon stick, 2 cardomom pods, 1 bay leaf!.
After the raw smell is gone, add the following;
1 cup coconut milk
1/4 cup evaporated or whole milk
Cook well for about 8 minutes, add the eggs and cook for additional 5 minutes, stirring occasionally, tasting for salt!.
Garnish with sliced green chillies, and serve with rice or any type of good bread!.

Wow! I wish I knew!! I've gone to local Asian markets and I'd see dozens of brands of canned Quail Eggs on their shelves and it boggles my mind!
I don't think it's just an Asian thing, because we have plenty of quail here in the midwestern prairies!. I'm just a city girl!.!.!. hahaahah
I googled this website that claims to have the largest selection of quail egg recipes on the web, and the owner is from down South around Louisiana I think!?!? (forgot already!!!)!.
