Firstly, use a metal pan and not a glass one so it can sit on top of the burner to make the gravy in!. After you remove the chicken, put the pan on a low burner (about 3 on a scale of 1 - 19) and add a few tablespoons of flour, perhaps about 3T!. Then stir the drippings and the flour until it is free of lumps and pasty and hot, kind of brown it for a bit but not too long!. Then, you add a bit of water or chicken broth a little bit at a time and keep stirring, you can then turn the burner up to about 5 at this time as long as you keep stirring!. If you let it sit, it will burn and you will have a big mess!
Then, once you have added maybe about 3 cups of liquid stir for awhile while it thickens!. If it is too thin, just turn the burner up and let some of the liquid burn off and it will thicken and be fine!. At this stage, I add salt and pepper and also onion powder and stir!. I also use a product called Gravy Master (comes in a little orange and brown bottle) this product colors the gravy nicely and adds a nice flavor, as it is an extract!. I use about a teaspoon of it!.
So, that's about it, keep it warm and stir it!.
You can do the same thing with turkey to make gravy, but with more drippings for a bigger bird, you need to add more flour!. It needs to be "pasty" but thin enough to stir around!. If you add broth or water, just use a bit at a time and stir and you will find it gets to the proper consistency!. also, taste it occasionally as you season it with the salt, pepper and onion powder!.
The same thing can be done with roast beef or pork drippings, basic gravy is really pretty easy!.

Take the dripping and put them in a saucepan, heat it up but not boiling!. In a seperate bowl, mix hot water and flour until combined!. Whisk the flour mixture in the saucepan until it's to your liking!. If too thin, add more flour!. If too thick, add water!.Www@FoodAQ@Com
Just add a little water to the drippings and mix flour and water in a cup and add to drippings and bring to a boil and it should start to get thicker!. If not add more flour and water!. Salt and Pepper your ready to go!.Www@FoodAQ@Com
