Cantaloupe? I have alot of them! Now what?!
Someone gave me like 10 cantaloupes!.!.!.they are VERY VERY VERY ripe!. Is there any way to freeze them for later use!.!.!.or anything else I can do with them!?Www@FoodAQ@Com

Yes, you can freeze them-- peel, de-seed, and chop them into cubes and lay them out on a tray so that the cubes are not touching (otherwise you will have to carve out huge frozen chunks when you go to use them!)!. Freeze them on the trays (you may have to do it in batches) and when they are all the way solid, then you can put them into bags!. They will be kind of soggy when you thaw them out so will probably only be good for smoothies or soups or something, but at least you won't be wasting them :)Www@FoodAQ@Com

Ingredients
4 cups cantaloupes, peeled, seeded, and diced
3 cups sugar
3 tablespoons lemon juice
1 (1 3/4 ounce) box dry pectin
Directions
1Place cantaloupe and sugar in large non-reactive saucepan, stir well, cover, and let set for 6-8 hours!.
2Add lemon juice and pectin and bring to a boil over medium-high heat, while stirring!. Continue to stir while the mixture boils for 5-6 minutes, or until it thickens sufficiently!.
3Ladle into hot jars and seal according to manufacturer’s instructions!.
4Makes 4 ? Cups!.
5**Note: this is a good way to use up cantaloupe that has a strong flavor, but is not very sweet!.

This is a "do ahead" recipe!. It makes a lovely first course!. Take it on a picnic or serve at your next dinner party!. It looks elegant and tastes refreshing! Takes minutes to make!.

1 cantaloupe, peeled,seeded and quartered
1 large orange, squeezed for juice
1 grated orange, rind of (reserve for garnish)
1/2 cup whipping cream (I use coffee cream)
1 teaspoon sugar
1 pinch ground ginger
1 pinch salt
Directions
1Chop melon into small pieces and place in food processor!.
2Process until smooth!.
3Transfer to a bowl and add orange juice, cream,sugar, salt& ginger!.
4Cover and refrigerate for 4-5 hours!.
5When serving sprinkle with grated orange peel!.

2Using pepper mill, grind freshly ground black pepper over cantaloupe to taste!.

1 cup sparkling cider (nonalcoholic)
2 to 3 teaspoons granulated sugar, optional
1/4 cup cold water, optional
1 small cucumber, peeled, seeded and diced
Kosher salt
Freshly ground black pepper
Directions
Place the cantaloupes on a flat surface and split them in half!. Scoop out and discard the seeds!. Use a spoon to scoop out the flesh in small increments!. The goal is to tightly pack 3 cups of cantaloupe flesh!.
Place the cantaloupe in the blender and add the lemon juice and cider!. Puree until smooth and taste for seasoning!. Add the sugar, if needed!. Use the water if more liquid is needed!. Pour the soup into a medium bowl!. Make an ice bath to chill the soup by combining some ice cubes and cold water in the bottom of a larger bowl!. Put the soup in the ice bath and store in the refrigerator until ready to serve!.
Season the cucumber lightly with salt and pepper!. When ready to serve, pour the soup into the chilled bowls and add some of the cucumber to each!.
or you could make a delicous juice drink called Thornton Melon-Ball (from the show Guys Big Bite)

1 cup yogurt
2 tsp!. grated ginger root
Directions
Put all ingredients in blender; blend well!. Chill for at least an hour -- the longer you chill the soup the thicker & creamier it gets!.
Number of Servings: 4

1/2 canteloupe
1/2 cup milk
Sugar to taste
3 cups water

6 oz!. can frozen fruit juice concentrate (I like pink lemonade)
3 cups cubed cantaloupe or other melon
3/4 cup water
10 paper drink cups
10 wooden popsicle sticks
Directions
In blender or food processor, combine fruit juice concentrate and cantaloupe and process until smooth!. Fill each drink cup with about 1/3 cup of this mixture, then freeze until partially frozen, about 1 hour
Number of Servings: 10
Chicken Salad Stuffed Canteloupes
1/3 cup sour cream
1/3 cup light mayonnaise
4 tsp lemon juice
1 tsp salt
1/4 tsp pepper
3 cups cubed cooked chicken
4 celery stalks, sliced thin
1 cup fresh mushrooms,chopped
1/4 cup chopped green pepper
1/4 cup chopped sweet red pepper
4 strips cooked and crumbled turkey bacon
1/2 cup chopped pecans, toasted
3 Canteloupes
In a small bowl, combine the sour cream, mayo, lemon juice, salt and pepper!. In a large bowl, combine the chicken, celery, mushrooms and peppers; stir in sour cream mixture until combined!. Cover and refridgerate for at least 4 hours!. Just before serving, stir in the bacon and pecans!. Serve in canteloupe halves that have had pulp and seeds removed!. Serves 6!.Www@FoodAQ@Com

I would deseed, peal, and chop at least one melon up and puree in a blender with 2 T lemon juice!. Freeze in ice cub trays or dixie cups!. These are great in mixed drinks, adding fresh flavor to a soup or stew, adding nutrition to smoothies, or just mix in with your frozen OJ for a really great morning drink!.
I would make melon balls from another one or two melons!.
